Salted Brownie Cookies-Chewy Decadent Delights

Craving the fudgy richness of a brownie but in a convenient, chewy cookie form? Look no further! These Salted Brownie Cookies are the ultimate decadent treat, boasting a crinkly top, intense chocolate flavor, and that irresistible salty-sweet kick that will keep you coming back for more. Get ready to bake pure bliss!

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed recommended)
  • 3/4 cup (90g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon flaky sea salt, for sprinkling (such as Maldon)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and light brown sugar until smooth and well combined.
  3. Add the eggs one at a time, whisking well after each addition until the mixture is glossy and lightened in color, about 1-2 minutes. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Be careful not to overmix; overmixing can lead to tough cookies. The dough will be thick and sticky.
  6. Using a 1.5-inch cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  7. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft and puffed. They will deflate and crinkle as they cool.
  8. Immediately upon removing from the oven, sprinkle each cookie generously with flaky sea salt.
  9. Let the cookies cool on the baking sheets for 5-10 minutes before transferring them to a wire rack to cool completely.
