Crustless Zucchini Quiche Easy Healthy Recipe

Craving a healthy and satisfying meal that’s bursting with fresh flavor? This Crustless Zucchini Quiche is your new go-to! It’s incredibly easy to prepare, packed with tender zucchini, and perfect for a light breakfast, brunch, or even a wholesome dinner. Ingredients

  • 2 medium zucchini, about 1 lb, grated
  • 1/2 teaspoon salt (for zucchini)
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 cup shredded cheese (cheddar, Gruyère, or Monterey Jack)
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano (optional)
  • Pinch of red pepper flakes (optional)
  • Cooking spray or butter for the dish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or an 8×8 inch baking dish with cooking spray or butter.
  2. Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with 1/2 teaspoon of salt, and let it sit for 10-15 minutes to draw out excess moisture.
  3. Firmly squeeze the zucchini to remove as much liquid as possible. You can use your hands, a clean kitchen towel, or paper towels for this. This step is crucial to prevent a watery quiche.
  4. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
  5. Whisk Egg Mixture: In a large bowl, whisk together the eggs, milk, shredded cheese, Parmesan cheese, black pepper, and optional oregano and red pepper flakes until well combined.
  6. Combine Ingredients: Add the squeezed zucchini and the sautéed onion and garlic mixture to the egg mixture. Stir gently until everything is evenly distributed.
  7. Bake: Pour the mixture into the prepared baking dish.
  8. Bake for 30-35 minutes, or until the quiche is set in the center and lightly golden brown on top. A knife inserted into the center should come out clean.
  9. Remove from the oven and let it cool for 5-10 minutes before slicing and serving. This allows the quiche to set further.
