Red White Blue Cheesecake Strawberries – Easy Dessert

Celebrate any occasion with this vibrant and effortlessly elegant Red, White, and Blue Cheesecake Strawberries dessert! This no-bake treat combines a luscious, creamy cheesecake filling with an abundance of fresh berries for a burst of flavor and patriotic color. Perfect for summer gatherings, holidays, or any time you crave a simple, show-stopping dessert.

Ingredients

  • 1 lb fresh strawberries, hulled and halved or quartered
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar, more to taste
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream (optional, for a lighter consistency)
  • Zest of 1/2 a lemon (optional, for brightness)

Instructions

  1. Prepare the Berries: Gently wash and dry the strawberries and blueberries. Hull the strawberries and slice them in half or quarters, depending on their size. Set aside.
  2. Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1-2 minutes.
  3. Sweeten and Flavor: Add the powdered sugar, vanilla extract, and lemon zest (if using) to the cream cheese. Continue to beat until well combined and smooth. Taste and add more powdered sugar if desired.
  4. Achieve Desired Consistency (Optional): If you prefer a lighter, more whipped filling, slowly beat in the heavy cream until the mixture is smooth and slightly airy. Be careful not to overmix.
  5. Assemble and Serve: You can serve this dessert in a few delightful ways:
    As a Dip: Transfer the cheesecake filling to a serving bowl and arrange the prepared strawberries and blueberries around it for easy dipping.
    Layered Parfaits: In small glasses or jars, alternate layers of cheesecake filling with strawberries and blueberries.
    Topped Strawberries: Spoon or pipe the cheesecake filling onto individual strawberry halves, then top with a few blueberries for an elegant bite-sized treat.
  6. Chill: For best results, chill the assembled dessert or the cheesecake filling in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and the filling to firm up slightly.
