Marry Me Butter Beans- Easy Creamy Delicious Recipe

Get ready to fall head over heels for these Marry Me Butter Beans! This incredibly easy, unbelievably creamy, and utterly delicious recipe will have everyone asking for seconds (and maybe even proposing). Perfect as a comforting side or a light vegetarian main, it’s pure comfort in a bowl.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans large butter beans (lima beans), rinsed and drained
  • 1.5 cups vegetable broth (or chicken broth)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional, but highly recommended)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional, for a little kick)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or chives, chopped, for garnish

Instructions

  1. Melt butter in a large skillet or Dutch oven over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes.
  2. Stir in the minced garlic, dried thyme, smoked paprika, and red pepper flakes (if using). Cook for another minute until fragrant, being careful not to burn the garlic.
  3. Add the rinsed and drained butter beans and vegetable broth to the skillet. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing the flavors to meld and the beans to soften further.
  4. Uncover and stir in the heavy cream and grated Parmesan cheese (if using). Increase the heat slightly and cook, stirring occasionally, for another 5-7 minutes, until the sauce has thickened to your desired consistency.
  5. Taste and season generously with salt and freshly ground black pepper. Adjust any seasonings as needed.
  6. Serve hot, garnished with fresh parsley or chives. These beans are fantastic on their own, alongside crusty bread, or as a side to roasted chicken or fish.
