Easy Pizza Pasta Bake
I threw this together one night when my kids were whining about being hungry and I realized I’d completely forgotten to plan dinner. With bare cupboards and zero energy to make a grocery run, I scrounged up pasta, sauce, cheese, and some pepperoni from the back of the meat drawer. What started as kitchen desperation has become our go-to for busy weeknights when I can’t face cooking anything complicated. There’s something about that combination of chewy pasta, tangy sauce, and crispy-edged pepperoni that satisfies everyone’s cravings without me having to make separate meals for my picky eaters.

1 large Yellow Onion, finely chopped

1 (6 ounce / 170g) can Tomato Paste

1/2 cup Chicken or Vegetable Broth

2 teaspoons Dried Oregano

1 teaspoon Dried Basil

1/2 teaspoon Red Pepper Flakes (optional)

1 teaspoon Sugar

Salt and Freshly Ground Black Pepper, to taste

2 cups Ricotta Cheese (whole milk preferred)

1 large Egg, beaten

1/4 cup Fresh Parsley, chopped

1/2 teaspoon Salt (for ricotta)

1/4 teaspoon Black Pepper (for ricotta)

4 ounces (113g) Sliced Pepperoni

1/2 cup Sliced Black Olives (optional)

1/2 cup Sliced Mushrooms (fresh or canned)

1/4 cup Diced Bell Peppers (any color)

2 cups Shredded Mozzarella Cheese (low-moisture, part-skim)

1/2 cup Grated Parmesan Cheese

Fresh Basil Leaves (optional)

Extra Red Pepper Flakes (optional)
Instructions

Step 1
Finely chop onion, mince garlic, chop parsley. Slice or dice olives, mushrooms, and bell peppers. Grate mozzarella and Parmesan cheese if not pre-shredded. Beat the large egg for the ricotta mixture. Have all cheeses and ricotta ready. -
Step 2
Bring a large pot of salted water with 1 tbsp olive oil to a rolling boil. Add penne pasta and cook 1-2 minutes less than package directions, to al dente. Drain and set aside; do not rinse. -
Step 3
In a large Dutch oven or pot over medium-high heat, add 1 tbsp olive oil. Add ground beef, breaking it up, and brown thoroughly. Drain excess fat, leaving 1-2 tbsp in the pot. Transfer beef to a paper towel-lined plate. -
Step 4
Reduce heat to medium. Add chopped onion to the pot and sauté for 5-7 minutes until soft. Add minced garlic and cook for 1 minute. Stir in tomato paste and cook for 2-3 minutes, stirring constantly. -
Step 5
Stir in crushed tomatoes, tomato sauce, and chicken/vegetable broth. Add oregano, basil, optional red pepper flakes, and sugar. Stir in browned ground beef. Bring to a gentle simmer, then reduce heat to low, cover, and simmer for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste. -
Step 6
While sauce simmers, combine ricotta cheese, beaten egg, chopped fresh parsley, 1/2 tsp salt, and 1/4 tsp black pepper in a medium bowl. Mix until smooth. -
Step 7
Add the drained, slightly cooled pasta directly into the pot with the meat sauce. Toss gently until every piece of pasta is coated. -
Step 8
Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. Spread half of the sauced pasta mixture into the bottom. Dollop the ricotta mixture evenly over the pasta. Sprinkle half of the mozzarella and Parmesan cheese, then arrange half of the pepperoni and other chosen toppings (olives, mushrooms, bell peppers). -
Step 9
Spoon the remaining sauced pasta mixture over the toppings. Sprinkle the remaining mozzarella and Parmesan cheese generously over the top. Arrange the remaining pepperoni slices and other desired toppings. Optionally, lightly sprinkle with more dried oregano or basil. -
Step 10
Cover the baking dish loosely with aluminum foil. Bake in the preheated oven for 25 minutes. -
Step 11
Remove the foil. Continue baking for an additional 15-20 minutes, or until the cheese is melted, bubbly, and golden brown. For an extra crispy top, broil for 2-3 minutes, watching carefully. -
Step 12
Carefully remove from oven and let rest for at least 10-15 minutes on a wire rack before serving. Slice into squares. Garnish with fresh basil leaves and offer extra red pepper flakes on the side, if desired. Serve warm.
