- FOR THE CRANBERRY PISTACHIO SHORTBREAD:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1/2 cup dried cranberries, chopped
- 1/2 cup shelled pistachios, chopped
- FOR THE CHOCOLATE CRINKLE COOKIES:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup powdered sugar (for rolling)
- FOR ROYAL ICING (for decorating gingerbread & sugar cookies):
- 2 large egg whites (or 4 tbsp meringue powder + 6 tbsp warm water)
- 3-4 cups powdered sugar, sifted
