Enjoy a fun twist on a classic treat with these Funfetti Rice Krispies Treats! Made with gooey marshmallows, crunchy Rice Krispies, and colorful rainbow sprinkles, they’re perfect for any celebration or a sweet snack at home.

Ingredients

Scale
  • 4 cups of mini marshmallows
  • 3 tablespoons of unsalted butter
  • 6 cups of Rice Krispies cereal
  • 1 cup of white chocolate chips
  • 1/2 cup of rainbow sprinkles
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Instructions

  1. Gather Your Ingredients: Start by gathering all the ingredients listed above and set them out on your countertop for a smoother cooking process.
  2. Melt the Butter: In a large saucepan, add the 3 tablespoons of unsalted butter. Place over low heat and stir gently until melted.
  3. Add the Marshmallows: Once the butter is melted, add the 4 cups of mini marshmallows. Stir continuously until fully melted and smooth, about 5-7 minutes.
  4. Incorporate Vanilla and Salt: Remove the saucepan from heat and stir in the 1 teaspoon of vanilla extract and a pinch of salt.
  5. Mix in the Rice Krispies: Add the 6 cups of Rice Krispies cereal to the marshmallow mixture and stir until all the cereal is evenly coated.
  6. Fold in the White Chocolate Chips: Gently fold in the 1 cup of white chocolate chips until combined.
  7. Add the Rainbow Sprinkles: Fold in the 1/2 cup of rainbow sprinkles, being careful not to break them apart too much.
  8. Prepare the Pan: Line a 9×13 inch baking dish with parchment paper or lightly grease it with butter or cooking spray.
  9. Transfer the Mixture: Pour the Rice Krispies mixture into the prepared baking dish and spread it out evenly, pressing down gently.
  10. Let it Set: Allow the mixture to cool at room temperature for about 30 minutes, or refrigerate for 15 minutes to speed up the process.
  11. Cut into Squares: Once set, cut into squares using a sharp knife.
  12. Serve and Enjoy: Place the squares on a serving platter or in an airtight container.

Notes

  • Store any leftovers in an airtight container at room temperature for up to a week. If they harden, microwave for a few seconds to soften.
  • Wrap each square in plastic wrap and place in a freezer-safe bag for up to 3 months. Thaw at room temperature before serving.
  • Substitute white chocolate chips with milk or dark chocolate for a different flavor.
