Ingredients
Scale
- 1 cup fresh blueberries
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups cold water
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Ice cubes
- Fresh mint leaves for garnish (optional)
- Additional blueberries for garnish (optional)
Instructions
- In a medium saucepan, combine 1 cup of fresh blueberries and 1 cup of granulated sugar.
- Add 1 cup of water to the saucepan.
- Place the saucepan over medium heat and stir occasionally until the mixture comes to a gentle boil.
- Once boiling, reduce the heat to low and let it simmer for about 10 minutes.
- After 10 minutes, remove the saucepan from the heat and let it cool for a few minutes.
- Using a fine mesh strainer, strain the syrup into a bowl or jar, pressing down on the blueberries to extract as much liquid as possible. Discard the solids.
- Set the blueberry syrup aside to cool completely.
- In a large pitcher, combine 1 cup of freshly squeezed lemon juice with 4 cups of cold water.
- Add the cooled blueberry syrup to the pitcher. Stir well to combine all the flavors.
- Place the pitcher in the refrigerator to chill for at least 30 minutes.
- In a mixing bowl, pour in 1 cup of heavy cream.
- Add 1 teaspoon of vanilla extract to the cream.
- Using an electric mixer, beat the cream on medium-high speed until soft peaks form.
- Once you have soft peaks, you can taste the whipped cream and add a little sugar if desired.
- Take your chilled lemonade from the refrigerator and give it a good stir.
- Fill a glass with ice cubes.
- Pour the blueberry lemonade over the ice, filling the glass about three-quarters full.
- Add a generous dollop of whipped cream on top of the lemonade.
- Garnish with fresh blueberries and mint leaves if desired.
Notes
