- 6 cups cubed seedless watermelon, chilled
- 1/2 cup fresh lime juice (approximately 4–5 limes)
- 1/4 cup simple syrup (see instructions below, or use agave nectar/honey to taste)
- 1/4 cup fresh mint leaves, loosely packed (optional)
- Ice cubes (approximately 2-3 cups, depending on desired consistency)
- Lime wedges and mint sprigs, for garnish (optional)
- Pinch of sea salt (enhances the sweetness)
- 1 cup granulated sugar
- 1 cup water
Instructions
- In a small saucepan, combine the granulated sugar and water.
- Place the saucepan over medium heat and stir constantly until the sugar is completely dissolved. This usually takes about 3-5 minutes. Make sure there are no sugar granules remaining on the bottom of the pan.
- Once the sugar is dissolved, remove the saucepan from the heat and let the simple syrup cool completely. This is important because adding hot syrup to the watermelon will affect the slushie’s texture. You can speed up the cooling process by placing the saucepan in an ice bath.
- Once cooled, transfer the simple syrup to an airtight container and store it in the refrigerator for up to 2 weeks. Homemade simple syrup adds a lovely smoothness to the slushie.
- Select a ripe, seedless watermelon. The best watermelons will feel heavy for their size and have a dull, not shiny, rind. Look for a yellow spot on the bottom where the watermelon rested on the ground; this indicates ripeness.
- Cut the watermelon into manageable pieces. I like to start by cutting it in half, then into quarters, and then slicing off the rind.
- Cut the watermelon flesh into approximately 1-inch cubes. Uniform cubes will blend more evenly.
- Place the watermelon cubes in a single layer on a baking sheet lined with parchment paper. This prevents the cubes from sticking together when frozen.
- Freeze the watermelon cubes for at least 2 hours, or until solid. Freezing the watermelon before blending is key to achieving that perfect slushie consistency. If you’re short on time, you can use chilled watermelon, but the slushie won’t be as thick.
- Remove the frozen watermelon cubes from the freezer. Let them sit at room temperature for about 5-10 minutes to soften slightly. This will make them easier to blend and prevent your blender from overheating.
- In a high-powered blender, combine the frozen watermelon cubes, fresh lime juice, simple syrup (or agave nectar/honey), fresh mint leaves (if using), and a pinch of sea salt.
- Start blending on low speed, gradually increasing to high speed. If the mixture is too thick and the blender is struggling, add a few ice cubes or a splash of water to help it blend more smoothly. Be careful not to add too much liquid, as this will dilute the flavor.
- Blend until the mixture is smooth and slushy, with no large chunks of watermelon remaining. This may take a few minutes, depending on the power of your blender. Stop occasionally to scrape down the sides of the blender jar with a spatula to ensure that all the ingredients are evenly incorporated.
- Taste the slushie and adjust the sweetness and tartness as needed. If it’s not sweet enough, add more simple syrup or agave nectar. If it’s too sweet, add a squeeze of lime juice. Remember that the flavor will mellow slightly as the slushie sits, so it’s better to err on the side of slightly sweeter.
- Pour the watermelon slushie into chilled glasses. Chilling the glasses beforehand will help keep the slushie cold for longer.
- Garnish with lime wedges and mint sprigs, if desired. A small umbrella or a colorful straw can also add a festive touch.
- Serve immediately and enjoy! Watermelon slushies are best enjoyed fresh, as they can separate and become watery if left to sit for too long. If you need to make them ahead of time, store them in the freezer and re-blend them briefly before serving.
Notes
- For a boozy version: Add 1-2 ounces of vodka, tequila, or rum per serving to the blender. Start with a smaller amount and taste, adding more to your liking. A light rum or silver tequila works particularly well with watermelon.
- Add other fruits: Experiment with adding other fruits to the slushie, such as strawberries, raspberries, or pineapple. These fruits will complement the watermelon flavor and add extra nutrients. Adjust the amount of simple syrup as needed, depending on the sweetness of the other fruits.
- Make it spicy: Add a pinch of cayenne pepper or a small piece of jalapeño (seeds removed) to the blender for a spicy kick. Start with a very small amount and taste, adding more to your liking. The spice will balance the sweetness of the watermelon and create a unique and refreshing flavor.

- Mint variations: If you don’t have fresh mint, you can use a few drops of mint extract. Be careful not to add too much, as mint extract can be quite strong. You can also try using other herbs, such as basil or cilantro, for a different flavor profile.
- Strain for a smoother texture: If you want a super smooth slushie, you can strain it through a fine-mesh sieve after blending. This will remove any small pieces of watermelon or mint that may have escaped the blender.
- Make popsicles: Pour the watermelon slushie into popsicle molds and freeze for a refreshing summer treat. This is a great way to use up any leftover slushie.
