  • 1 tablespoon olive oil

  • 1 cup canned tuna, drained and flaked
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup celery, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and pepper to taste
  • 4 slices of bread (optional, for serving)
  • Butter (for toasting bread, optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat for about a minute.
  2. Add the frozen hashbrowns to the skillet, spreading them out evenly.
  3. Cook undisturbed for 5-7 minutes until golden brown, then flip and cook for another 5-7 minutes until crispy on both sides.
  4. In a medium bowl, combine the drained and flaked tuna, mayonnaise, and Dijon mustard. Adjust the mayonnaise to your desired creaminess.
  5. Add the finely chopped celery and onion, then season with salt and pepper to taste.
  6. If using, fold in the parsley for added freshness.
  7. Once the hashbrowns are crispy, reduce the heat to low.
  8. Spread the tuna mixture evenly over the hashbrowns.
  9. Sprinkle the shredded cheddar cheese on top and cover the skillet with a lid. Cook on low heat for about 5 minutes until the cheese melts.
  10. In a separate skillet, heat over medium heat.
  11. Spread butter on one side of each slice of bread and toast butter-side down until golden brown, about 2-3 minutes. Flip to toast the other side if desired.
