- 2 cups frozen hashbrowns
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 cup canned tuna, drained and flaked
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup celery, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley (optional)
- Salt and pepper to taste
- 4 slices of bread (optional, for serving)
- Butter (for toasting bread, optional)
Instructions
- In a large skillet, heat the olive oil over medium heat for about a minute.
- Add the frozen hashbrowns to the skillet, spreading them out evenly.
- Cook undisturbed for 5-7 minutes until golden brown, then flip and cook for another 5-7 minutes until crispy on both sides.
- In a medium bowl, combine the drained and flaked tuna, mayonnaise, and Dijon mustard. Adjust the mayonnaise to your desired creaminess.
- Add the finely chopped celery and onion, then season with salt and pepper to taste.
- If using, fold in the parsley for added freshness.
- Once the hashbrowns are crispy, reduce the heat to low.
- Spread the tuna mixture evenly over the hashbrowns.
- Sprinkle the shredded cheddar cheese on top and cover the skillet with a lid. Cook on low heat for about 5 minutes until the cheese melts.
- In a separate skillet, heat over medium heat.
- Spread butter on one side of each slice of bread and toast butter-side down until golden brown, about 2-3 minutes. Flip to toast the other side if desired.
