Tortilla Rollups Appetizer: The Ultimate Guide to Easy Party Snacks

  • Total Time: 80 minutes
  • Yield: 100 slices 1x

Description

Easy and flavorful tortilla rollups filled with a creamy ranch cream cheese mixture and veggies. Perfect for parties and snacks!

Ingredients

Scale
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup sour cream
  • 1 (1 ounce) package dry ranch dressing mix
  • 1/2 cup finely chopped green onions
  • 1/2 cup finely chopped black olives
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped pickled jalapenos (optional)
  • 10 (10 inch) flour tortillas

Instructions

  1. Soften the Cream Cheese: Take the cream cheese out of the refrigerator at least an hour before starting. If short on time, microwave in 15-second intervals until soft, but not melted.
  2. Combine Cream Cheese and Sour Cream: In a large mixing bowl, beat together the softened cream cheese and sour cream until smooth and well combined (2-3 minutes on medium speed with an electric mixer).
  3. Add the Ranch Dressing Mix: Pour the entire packet of dry ranch dressing mix into the cream cheese mixture. Mix until evenly distributed.
  4. Incorporate the Veggies: Add the finely chopped green onions, black olives, red bell pepper, and jalapenos (if using) to the bowl. Gently fold these ingredients into the cream cheese mixture using a spatula.
  5. Taste and Adjust: Taste and adjust the filling to your liking. Add lemon juice or vinegar for tangier flavor, cayenne pepper or more jalapenos for spicier flavor. If too thick, add milk or sour cream, one tablespoon at a time, until desired consistency is reached.
  6. Chill the Filling (Optional): Chill the filling for at least 30 minutes in the refrigerator to help it firm up.
  7. Prepare Your Work Surface: Lay out a clean, flat surface to work on.
  8. Warm the Tortillas (Optional): Warm the tortillas slightly to make them more pliable.
  9. Spread the Filling: Take one tortilla and lay it flat on your work surface. Spread a thin, even layer of the cream cheese filling over the entire surface of the tortilla, leaving a small border (about 1/2 inch) around the edges.
  10. Roll the Tortilla Tightly: Starting at one edge of the tortilla, begin rolling it up tightly.
  11. Repeat with Remaining Tortillas: Repeat steps 9 and 10 with the remaining tortillas and cream cheese filling.
  12. Wrap and Chill: Once all the tortillas are rolled up, wrap them tightly in plastic wrap. Place the wrapped rollups in the refrigerator and chill for at least 1 hour, or preferably longer (up to 4 hours).
  13. Unwrap the Rollups: Remove the chilled rollups from the refrigerator and unwrap them from the plastic wrap.
  14. Slice the Rollups: Using a sharp, serrated knife, trim off the ends of each rollup (about 1/2 inch) to create clean, even edges. Then, slice each rollup into 1-inch thick slices.
  15. Arrange on a Platter: Arrange the sliced rollups on a serving platter.
  16. Garnish (Optional): Garnish the platter with some fresh herbs, such as parsley or cilantro. You can also sprinkle some extra chopped green onions or red bell pepper over the rollups.
  17. Serve and Enjoy! Serve the tortilla rollups chilled.
