Layers of seasoned ground beef, refried beans, cheese, and tortillas create a delicious and easy Taco Lasagna! Perfect for a crowd-pleasing weeknight dinner.

- 1 pound ground beef
- 1 packet taco seasoning
- 1 (15 ounce) can tomato sauce
- 1/2 cup water
- 1 (16 ounce) can refried beans
- 1 (8 ounce) container sour cream
- 1 (4 ounce) can chopped green chiles, undrained
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 12 (6-inch) flour tortillas
Instructions
- Prepare the Meat Mixture: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
- Sprinkle the taco seasoning over the browned beef.
- Pour in the tomato sauce and water. Stir well to combine.
- Reduce heat to low and simmer for 5-10 minutes, stirring occasionally, until the sauce thickens slightly.
- Prepare the Cheese Mixture: In a medium bowl, combine the sour cream and undrained chopped green chiles. Mix well.
- Mix well.
- Assemble the Taco Lasagna: Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- Place 4 tortillas in the bottom of the dish, overlapping to cover the surface.
- Spread half of the refried beans evenly over the tortillas.
- Spread half of the meat mixture over the refried beans.
- Sprinkle 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese over the meat.
- Dollop half of the sour cream mixture over the cheese and spread gently.
- Repeat layers 7-11: tortillas, remaining refried beans, remaining meat mixture, remaining cheddar and Monterey Jack cheese, and remaining sour cream mixture.
- Top with the remaining 4 tortillas, overlapping to cover.
- Sprinkle any remaining cheddar and Monterey Jack cheese over the top tortillas.
- Bake the Taco Lasagna: Cover the baking dish with aluminum foil.
- Bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown and the lasagna is heated through.
- Let it rest for 10-15 minutes before cutting and serving.
- Serve: Cut into squares and serve warm with your favorite toppings.
Notes
- Meat Variations: Use ground turkey, ground chicken, or shredded chicken instead of ground beef.
- Add Beans: Add a can of drained and rinsed black beans or pinto beans to the meat mixture.
- Spice it Up: Add cayenne pepper or hot sauce to the meat mixture.
