  • 1 packet taco seasoning
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup water
  • 1 (16 ounce) can refried beans
  • 1 (8 ounce) container sour cream
  • 1 (4 ounce) can chopped green chiles, undrained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 12 (6-inch) flour tortillas

Instructions

  1. Prepare the Meat Mixture: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
  2. Sprinkle the taco seasoning over the browned beef.
  3. Pour in the tomato sauce and water. Stir well to combine.
  4. Reduce heat to low and simmer for 5-10 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Prepare the Cheese Mixture: In a medium bowl, combine the sour cream and undrained chopped green chiles. Mix well.
  6. Mix well.
  7. Assemble the Taco Lasagna: Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  8. Place 4 tortillas in the bottom of the dish, overlapping to cover the surface.
  9. Spread half of the refried beans evenly over the tortillas.
  10. Spread half of the meat mixture over the refried beans.
  11. Sprinkle 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese over the meat.
  12. Dollop half of the sour cream mixture over the cheese and spread gently.
  13. Repeat layers 7-11: tortillas, remaining refried beans, remaining meat mixture, remaining cheddar and Monterey Jack cheese, and remaining sour cream mixture.
  14. Top with the remaining 4 tortillas, overlapping to cover.
  15. Sprinkle any remaining cheddar and Monterey Jack cheese over the top tortillas.
  16. Bake the Taco Lasagna: Cover the baking dish with aluminum foil.
  17. Bake for 25 minutes.
  18. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown and the lasagna is heated through.
  19. Let it rest for 10-15 minutes before cutting and serving.
  20. Serve: Cut into squares and serve warm with your favorite toppings.
