Scale
  • 1 pound pork tenderloin, cut into bite-sized pieces
  • 1 cup bell peppers (red, green, and yellow), chopped
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 egg, beaten
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (for frying)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Season the pork pieces with salt and pepper, ensuring even coverage.
  2. In a mixing bowl, combine the flour and cornstarch.
  3. Dip each piece of seasoned pork into the beaten egg, then coat it in the flour and cornstarch mixture.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat.
  5. Add the coated pork pieces in batches, frying for 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.
  6. In a separate bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and sesame oil for the sauce.
  7. In the same skillet, sauté minced garlic and ginger for 30 seconds until fragrant.
  8. Add chopped onion and bell peppers, stir-frying for 3-4 minutes until slightly softened.
  9. Add pineapple chunks and cook for another 2 minutes.
  10. Pour the sweet and sour sauce over the vegetables and pineapple, simmering for 2-3 minutes until thickened.
  11. Add the fried pork back into the skillet, tossing to coat with the sauce and vegetables.
  12. Cook for an additional 2-3 minutes to allow flavors to meld.
  13. Remove from heat and transfer to a serving platter, garnishing with chopped green onions.
  14. Serve hot over steamed rice or alongside fried rice.

Notes

  • For extra crunch, consider adding cashews or peanuts before serving.
