- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 egg, beaten
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil (for frying)
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Season the pork pieces with salt and pepper, ensuring even coverage.
- In a mixing bowl, combine the flour and cornstarch.
- Dip each piece of seasoned pork into the beaten egg, then coat it in the flour and cornstarch mixture.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the coated pork pieces in batches, frying for 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.
- In a separate bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and sesame oil for the sauce.
- In the same skillet, sauté minced garlic and ginger for 30 seconds until fragrant.
- Add chopped onion and bell peppers, stir-frying for 3-4 minutes until slightly softened.
- Add pineapple chunks and cook for another 2 minutes.
- Pour the sweet and sour sauce over the vegetables and pineapple, simmering for 2-3 minutes until thickened.
- Add the fried pork back into the skillet, tossing to coat with the sauce and vegetables.
- Cook for an additional 2-3 minutes to allow flavors to meld.
- Remove from heat and transfer to a serving platter, garnishing with chopped green onions.
- Serve hot over steamed rice or alongside fried rice.
