  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup raisins or currants (optional)
  • 1 egg (for egg wash)
  • Coarse sugar for sprinkling (optional)

Instructions

  1. In a small saucepan, heat the whole milk over medium heat until warm (about 110°F or 43°C). Remove from heat and sprinkle the active dry yeast over the warm milk. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, ground cardamom, and salt. Mix well.
  3. Once the yeast mixture is frothy, add the melted unsalted butter and the two large eggs to the dry ingredients. Pour in the yeast mixture.
  4. Mix until a sticky dough forms using a wooden spoon or a dough hook attachment.
  5. Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Add more flour if necessary, but avoid overdoing it.
  6. Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  7. In a small bowl, mix the light brown sugar and ground cinnamon. If using, add raisins or currants.
  8. Once the dough has risen, punch it down gently and roll it out into a large rectangle (about 12×18 inches) on a floured surface.
  9. Spread the filling mixture evenly over the dough, leaving a small border around the edges.
  10. Starting from one long edge, roll the dough into a tight log.
  11. Pinch the seam to seal the log. Cut it into 12 equal pieces using a sharp knife or kitchen scissors.
  12. Twist each piece into a spiral shape or form them into knots. Place them in a muffin tin or on a parchment-lined baking sheet.
  13. Cover with a kitchen towel and let rise for another 30-45 minutes until puffed.
  14. Preheat your oven to 375°F (190°C) while the buns are rising.
