- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup light brown sugar
- 1 tablespoon ground cinnamon
- 1/4 cup raisins or currants (optional)
- 1 egg (for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- In a small saucepan, heat the whole milk over medium heat until warm (about 110°F or 43°C). Remove from heat and sprinkle the active dry yeast over the warm milk. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, ground cardamom, and salt. Mix well.
- Once the yeast mixture is frothy, add the melted unsalted butter and the two large eggs to the dry ingredients. Pour in the yeast mixture.
- Mix until a sticky dough forms using a wooden spoon or a dough hook attachment.
- Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Add more flour if necessary, but avoid overdoing it.
- Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- In a small bowl, mix the light brown sugar and ground cinnamon. If using, add raisins or currants.
- Once the dough has risen, punch it down gently and roll it out into a large rectangle (about 12×18 inches) on a floured surface.
- Spread the filling mixture evenly over the dough, leaving a small border around the edges.
- Starting from one long edge, roll the dough into a tight log.
- Pinch the seam to seal the log. Cut it into 12 equal pieces using a sharp knife or kitchen scissors.
- Twist each piece into a spiral shape or form them into knots. Place them in a muffin tin or on a parchment-lined baking sheet.
- Cover with a kitchen towel and let rise for another 30-45 minutes until puffed.
- Preheat your oven to 375°F (190°C) while the buns are rising.
