Description
Delicate, buttery strawberry cookies coated in powdered sugar. A festive, melt-in-your-mouth treat!
Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, finely ground into a powder
Instructions
- Prepare Strawberry Powder: Grind freeze-dried strawberries in a food processor until a fine powder. Sift for a smoother texture (optional). Set aside.
- Cream Butter and Sugar: In a large bowl, cream together softened butter and 1/2 cup powdered sugar until light and fluffy (3-5 minutes).
- Add Extracts: Beat in vanilla extract and almond extract (if using).
- Combine Dry Ingredients: In a separate bowl, whisk together flour, salt, and strawberry powder.
- Combine Wet and Dry: Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
- Chill Dough: Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Shape Cookies: Roll dough into 1-inch balls.
- Bake: Place cookies on baking sheets, leaving 1 inch of space between each. Bake for 10-12 minutes, or until edges are lightly golden. Cookies should still be pale in the center.
- Cool Slightly: Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- First Coating: While cookies are still slightly warm, roll them in powdered sugar.
- Second Coating: Once cookies are completely cooled, roll them in powdered sugar again.
- Enjoy: Store in an airtight container at room temperature.
Notes
- For the best results, use softened, not melted, butter.
- Sifting the strawberry powder is recommended for a smoother cookie texture.
- Chilling the dough is crucial to prevent excessive spreading during baking.
- Be careful not to overbake the cookies, as they will become dry.
- The almond extract is optional but enhances the strawberry flavor.
