Instructions

  1. Prepare Strawberry Powder: Grind freeze-dried strawberries in a food processor until a fine powder. Sift for a smoother texture (optional). Set aside.
  2. Cream Butter and Sugar: In a large bowl, cream together softened butter and 1/2 cup powdered sugar until light and fluffy (3-5 minutes).
  3. Add Extracts: Beat in vanilla extract and almond extract (if using).
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, salt, and strawberry powder.
  5. Combine Wet and Dry: Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Chill Dough: Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  7. Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Shape Cookies: Roll dough into 1-inch balls.
  9. Bake: Place cookies on baking sheets, leaving 1 inch of space between each. Bake for 10-12 minutes, or until edges are lightly golden. Cookies should still be pale in the center.
  10. Cool Slightly: Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  11. First Coating: While cookies are still slightly warm, roll them in powdered sugar.
