  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon honey (or agave nectar for vegan option)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste

Instructions

  1. Prepare the Pineapple: Cut off the top and bottom of the pineapple. Slice off the skin, removing any remaining “eyes.” Cut into quarters lengthwise and remove the core. Dice into 1/4-inch pieces and place in a medium-sized mixing bowl.
  2. Prepare the Vegetables: Wash and seed the red bell pepper. Dice into 1/4-inch pieces and add to the bowl. Peel and finely dice the red onion. Add to the bowl. Seed and mince the jalapeño(s), adding to the bowl (start with one and add more to taste). Chop the cilantro and add to the bowl.
  3. Make the Dressing: In a small bowl, whisk together the lime juice, honey (or agave nectar), cumin, chili powder, cayenne pepper (if using), salt, and black pepper.
  4. Combine: Pour the dressing over the pineapple and vegetables. Gently toss until evenly coated.
  5. Chill: Cover and refrigerate for at least 30 minutes (or up to 2 hours) to allow flavors to meld.
  6. Serve: Stir before serving. Taste and adjust seasoning if needed. Serve with tortilla chips, grilled meats, tacos, or as desired.
