  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons olive oil, divided
  • 6 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dry white wine (or chicken broth)
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add linguine and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally.
  3. Before draining, reserve about 1 cup of pasta cooking water.
  4. Drain linguine and toss with a little olive oil to prevent sticking.
  5. In a bowl, season shrimp with salt, black pepper, and red pepper flakes.
  6. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  7. Add shrimp in a single layer and cook for 2-3 minutes until pink. Flip and cook for another 1-2 minutes. Remove from skillet.
  8. In the same skillet, add remaining olive oil and sauté garlic for 30 seconds.
  9. Pour in wine (or broth) and deglaze the skillet. Simmer for 2-3 minutes.
  10. Stir in lemon juice and zest, simmer for another minute.
  11. Return shrimp and linguine to the skillet, tossing to coat.
  12. Add reserved pasta water gradually until desired consistency is reached.
  13. Stir in parsley and adjust seasoning if needed.
  14. Plate the dish and sprinkle with Parmesan cheese if desired.
  15. Garnish with additional parsley or a lemon slice.
  16. Serve immediately and enjoy!
