- 8 oz (225 g) pasta of your choice
- 2 tablespoons olive oil
- 1 pound (450 g) boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon smoked paprika
- 4 cloves garlic, minced
- 1/2 cup (120 ml) chicken broth
- 1/2 cup (120 ml) heavy cream
- 1/4 cup (60 g) unsalted butter
- 1/2 cup (50 g) grated Parmesan cheese
- 1/4 cup (15 g) fresh parsley, chopped
- Red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente (about 8-10 minutes).
- Before draining, reserve about 1 cup of the pasta cooking water.
- Drain the pasta and set aside without rinsing.
- In a large skillet, heat olive oil over medium-high heat.
- Season chicken pieces with salt, pepper, and smoked paprika.
- Add chicken to the skillet in a single layer and cook for 5-7 minutes until golden brown and cooked through.
- Stir in minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in chicken broth, scraping the bottom of the skillet to release browned bits.
- Reduce heat to medium-low, stir in heavy cream and butter, and simmer for 3-4 minutes until thickened.
- Gradually add Parmesan cheese, stirring until melted. Adjust consistency with reserved pasta water if needed.
- Toss the drained pasta in the skillet to coat with the sauce, adding more pasta water if necessary.
- Adjust seasoning with salt, pepper, or red pepper flakes to taste.
- Remove from heat and sprinkle with chopped parsley.
- Serve immediately, garnished with extra Parmesan if desired.
