  • 4 slices of American cheese
  • 4 burger buns (preferably brioche)
  • Butter, for toasting the buns
  • Optional toppings: lettuce, tomato, pickles, onions
  • 1/2 cup mayonnaise
  • 1/4 cup cooked and crumbled bacon (about 4 slices)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  1. In a medium mixing bowl, combine the mayonnaise, crumbled bacon, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  2. Using a whisk or a fork, mix everything together until it’s well combined and smooth. Ensure the bacon is evenly distributed throughout the sauce.
  3. Season with salt and pepper to taste, starting with a pinch of each and adjusting as needed.
  4. Cover the bowl with plastic wrap and refrigerate the Baconnaise sauce for at least 30 minutes to allow the flavors to meld.
  5. Preheat your griddle or cast-iron skillet over medium-high heat until hot enough to create a nice sear on the burgers.
  6. Divide the ground beef into four equal portions (about 4 ounces each) and gently form them into loose balls.
  7. Place the beef balls onto the skillet, leaving enough space between them. You should hear a sizzle when they hit the pan.
  8. Using a sturdy spatula, smash each ball down firmly until it’s about 1/2 inch thick to create a nice crust while keeping the inside juicy.
  9. Season the patties generously with salt and pepper.
  10. Cook the patties for about 2-3 minutes without moving them to let the crust form. If using a cast-iron skillet, press down slightly with the spatula for even cooking.
