- 1 pound ground beef (80/20 blend)
- Salt and pepper, to taste
- 4 slices of American cheese
- 4 burger buns (preferably brioche)
- Butter, for toasting the buns
- Optional toppings: lettuce, tomato, pickles, onions
- 1/2 cup mayonnaise
- 1/4 cup cooked and crumbled bacon (about 4 slices)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- In a medium mixing bowl, combine the mayonnaise, crumbled bacon, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
- Using a whisk or a fork, mix everything together until its well combined and smooth. Ensure the bacon is evenly distributed throughout the sauce.
- Season with salt and pepper to taste, starting with a pinch of each and adjusting as needed.
- Cover the bowl with plastic wrap and refrigerate the Baconnaise sauce for at least 30 minutes to allow the flavors to meld.
- Preheat your griddle or cast-iron skillet over medium-high heat until hot enough to create a nice sear on the burgers.
- Divide the ground beef into four equal portions (about 4 ounces each) and gently form them into loose balls.
- Place the beef balls onto the skillet, leaving enough space between them. You should hear a sizzle when they hit the pan.
- Using a sturdy spatula, smash each ball down firmly until its about 1/2 inch thick to create a nice crust while keeping the inside juicy.
- Season the patties generously with salt and pepper.
- Cook the patties for about 2-3 minutes without moving them to let the crust form. If using a cast-iron skillet, press down slightly with the spatula for even cooking.
- After 2-3 minutes, flip the patties over and immediately place a slice of American cheese on each patty. Cover the skillet with a lid for about 1 minute to help the cheese melt.
- While the cheese is melting, butter the insides of the burger buns and toast them on another skillet or on the griddle until golden brown.
- Spread a generous amount of the Baconnaise sauce on the bottom half of each toasted bun.
- Place a cheesy smash burger patty on top of the sauce.
- Add your choice of toppings, such as fresh lettuce, juicy tomato slices, crunchy pickles, and thinly sliced onions.
- Top it off with the other half of the bun and give it a gentle press to hold everything together.
- Repeat the assembly process for the remaining burgers.
