- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 ounces fettuccine pasta
- 1 cup frozen peas (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
- 1 tablespoon olive oil (optional)
Instructions
- Start by rinsing the chicken breasts under cold water and patting them dry with paper towels.
- Season the chicken breasts on both sides with salt, black pepper, garlic powder, and Italian seasoning.
- If desired, heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown.
- Transfer the chicken breasts to the slow cooker.
- Pour the chicken broth over the chicken in the slow cooker.
- Add the heavy cream to the slow cooker and stir gently to combine.
- Cover the slow cooker and set it to low heat. Cook for 6-7 hours or on high heat for 3-4 hours.
- About 30 minutes before the chicken is done, bring a large pot of salted water to a boil.
- Add the fettuccine pasta and cook according to package instructions until al dente, about 8-10 minutes.
- Drain the pasta and set it aside.
- Once the cooking time is complete, carefully remove the chicken from the slow cooker.
- Shred the chicken into bite-sized pieces using two forks.
- Return the shredded chicken to the slow cooker and stir it into the sauce.
- Add the grated Parmesan cheese to the slow cooker and stir well.
- If using frozen peas, add them now.
- Let the mixture cook for an additional 10-15 minutes on low heat.
- Add the cooked fettuccine pasta directly into the slow cooker and gently toss to combine.
- If the sauce is too thick, add a splash of chicken broth or water.
- Allow the pasta to sit in the sauce for a few minutes before serving.
- Portion the Chicken Alfredo onto plates or into bowls.
- Garnish with chopped fresh parsley.
- Serve immediately and enjoy!
