  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 ounces fettuccine pasta
  • 1 cup frozen peas (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • 1 tablespoon olive oil (optional)

Instructions

  1. Start by rinsing the chicken breasts under cold water and patting them dry with paper towels.
  2. Season the chicken breasts on both sides with salt, black pepper, garlic powder, and Italian seasoning.
  3. If desired, heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown.
  4. Transfer the chicken breasts to the slow cooker.
  5. Pour the chicken broth over the chicken in the slow cooker.
  6. Add the heavy cream to the slow cooker and stir gently to combine.
  7. Cover the slow cooker and set it to low heat. Cook for 6-7 hours or on high heat for 3-4 hours.
  8. About 30 minutes before the chicken is done, bring a large pot of salted water to a boil.
  9. Add the fettuccine pasta and cook according to package instructions until al dente, about 8-10 minutes.
  10. Drain the pasta and set it aside.
  11. Once the cooking time is complete, carefully remove the chicken from the slow cooker.
  12. Shred the chicken into bite-sized pieces using two forks.
  13. Return the shredded chicken to the slow cooker and stir it into the sauce.
  14. Add the grated Parmesan cheese to the slow cooker and stir well.
  15. If using frozen peas, add them now.
  16. Let the mixture cook for an additional 10-15 minutes on low heat.
  17. Add the cooked fettuccine pasta directly into the slow cooker and gently toss to combine.
  18. If the sauce is too thick, add a splash of chicken broth or water.
  19. Allow the pasta to sit in the sauce for a few minutes before serving.
  20. Portion the Chicken Alfredo onto plates or into bowls.
  21. Garnish with chopped fresh parsley.
  22. Serve immediately and enjoy!
