Description
Enjoy a quick and delicious Shrimp Scampi with succulent shrimp sautéed in garlic and butter, tossed with linguine and a splash of white wine. This dish is perfect for a weeknight dinner or a special occasion!

- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (like Sauvignon Blanc)
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
- Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
- Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Once melted, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.
- Add shrimp in a single layer, season with salt and pepper. Cook for 2-3 minutes on one side until pink and opaque, then flip and cook for another 2-3 minutes until fully cooked.
- Pour in the white wine to deglaze the pan, simmer for 2-3 minutes until reduced slightly.
- Squeeze in lemon juice and stir to combine.
- Add remaining 2 tablespoons of butter, stirring until melted and combined.
- Add drained pasta to the skillet with shrimp and sauce. Toss gently to coat, adding reserved pasta water as needed for desired consistency.
- Stir in chopped parsley, taste, and adjust seasoning with salt, pepper, or lemon juice if needed.
- Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired. Pair with crusty bread to soak up the sauce.
