This Shrimp Ceviche features fresh shrimp marinated in zesty lime juice, combined with crunchy vegetables and aromatic herbs. Served with creamy avocado and crispy tortilla chips, its a refreshing appetizer or light meal perfect for any occasion.

- 1 pound fresh shrimp, peeled and deveined
- 1 cup fresh lime juice (about 8–10 limes)
- 1 medium red onion, finely chopped
- 1 medium cucumber, diced
- 1–2 jalapeño peppers, finely chopped (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh cilantro, chopped
- Salt, to taste
- Black pepper, to taste
- Avocado, sliced (for serving)
- Tortilla chips (for serving)
Instructions
- Rinse the shrimp under cold water to remove any residual sand or debris. Place the shrimp in a medium-sized bowl and pour the fresh lime juice over them, ensuring they are fully submerged. Cover with plastic wrap and refrigerate for 30-45 minutes until the shrimp turn pink and opaque.
- Finely chop the red onion and soak it in cold water for about 10 minutes to mellow its sharpness. Drain and set aside. Dice the cucumber into small pieces, chop the jalapeños (removing seeds for milder flavor if desired), and halve the cherry tomatoes. Chop the fresh cilantro.
- Once the shrimp is marinated, drain the excess lime juice (do not rinse). In a large mixing bowl with the cherry tomatoes, add the marinated shrimp, red onion, cucumber, and jalapeños. Gently toss together.
- Season the mixture with salt and black pepper to taste, starting with about 1/2 teaspoon of salt. Toss again to combine, adding more lime juice if desired.
- Cover the bowl with plastic wrap and let the ceviche chill in the refrigerator for another 15-20 minutes. When ready to serve, gently stir the ceviche and present it in individual bowls or on a platter. Garnish with avocado slices and serve with tortilla chips.
Notes
- Always use the freshest shrimp available. Frozen shrimp can be a good option as it helps eliminate potential bacteria.
- Customize your ceviche by adding diced mango or pineapple for sweetness, or bell peppers for extra crunch.
- Substitute shrimp with other seafood like scallops or fish if preferred.
