- 1 pound large shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 red bell pepper, sliced

- 3 cloves garlic, minced

- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil (for cooking)

Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a medium bowl, combine the shrimp with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Toss to coat and let marinate for 15 minutes.
- Prepare the vegetables: wash and cut the broccoli into bite-sized pieces, slice the red bell pepper, and rinse the snap peas. Set aside.
- Mince the garlic and ginger, using a microplane for the ginger if possible.
- In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil.
- Add the marinated shrimp in a single layer and cook undisturbed for 2-3 minutes until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add more oil if needed, then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the broccoli, red bell pepper, and snap peas to the skillet. Stir-fry for 3-4 minutes until tender-crisp.
- Return the shrimp to the skillet and pour the prepared sauce over the mixture. Stir to coat evenly.
- Cook for an additional 2-3 minutes until the sauce thickens and clings to the shrimp and vegetables.
- Drizzle sesame oil over the stir-fry and toss to combine.
- Taste and adjust seasoning if necessary.
- Serve hot over cooked rice or noodles, garnished with sesame seeds or sliced green onions if desired.
