  • 2 cups broccoli florets
  • 1 red bell pepper, sliced

  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for cooking)
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a medium bowl, combine the shrimp with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Toss to coat and let marinate for 15 minutes.
  3. Prepare the vegetables: wash and cut the broccoli into bite-sized pieces, slice the red bell pepper, and rinse the snap peas. Set aside.
  4. Mince the garlic and ginger, using a microplane for the ginger if possible.
  5. In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, and cornstarch. Set aside.
  6. Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil.
  7. Add the marinated shrimp in a single layer and cook undisturbed for 2-3 minutes until pink and opaque. Remove from the skillet and set aside.
  8. In the same skillet, add more oil if needed, then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  9. Add the broccoli, red bell pepper, and snap peas to the skillet. Stir-fry for 3-4 minutes until tender-crisp.
  10. Return the shrimp to the skillet and pour the prepared sauce over the mixture. Stir to coat evenly.
  11. Cook for an additional 2-3 minutes until the sauce thickens and clings to the shrimp and vegetables.
  12. Drizzle sesame oil over the stir-fry and toss to combine.
  13. Taste and adjust seasoning if necessary.
  14. Serve hot over cooked rice or noodles, garnished with sesame seeds or sliced green onions if desired.
