- 1 (8 ounce) container frozen whipped topping, thawed
- 1 cup mini marshmallows
- 1/2 cup Andes mint baking chips
- Optional: Shamrock sprinkles for garnish
- Optional: Graham cracker crumbs for serving
Instructions
- Soften the Cream Cheese: Ensure cream cheese is softened to room temperature.
- Beat the Cream Cheese: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (2-3 minutes). Scrape down the sides of the bowl.
- Add Sweetened Condensed Milk: Pour in the sweetened condensed milk and mix on low speed until fully incorporated.
- Incorporate the Extracts: Add vanilla and peppermint extracts. Mix on low speed until just combined.
- Add the Green Food Coloring: Add green food coloring, a little at a time, until you reach your desired shade of green. Mix well after each addition.
- Prepare the Whipped Topping: Make sure your whipped topping is fully thawed.
- Gently Fold in the Whipped Topping: Add the thawed whipped topping to the cream cheese mixture. Use a rubber spatula to gently fold the whipped topping into the cream cheese mixture. Be careful not to overmix. Fold until just combined, with no streaks of whipped topping remaining.
- Add the Mini Marshmallows: Sprinkle in the mini marshmallows. Gently fold them into the fluff until they are evenly distributed.
- Incorporate the Andes Mint Baking Chips: Add the Andes mint baking chips. Gently fold them into the fluff until they are evenly distributed.
- Chill the Fluff: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
- Garnish (Optional): Before serving, you can garnish the fluff with shamrock sprinkles for an extra festive touch.
- Serve: Serve the Shamrock Cheesecake Fluff chilled. You can serve it in individual bowls, parfait glasses, or even as a dip with graham cracker crumbs.
