  • 20 large white mushrooms
  • 1 pound Italian sausage
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (preferably Italian seasoned)
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms with a damp paper towel and remove the stems by gently twisting them off. Finely chop the stems and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped mushroom stems and sauté for 3-4 minutes until softened.
  4. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  5. Add the Italian sausage to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes.
  6. Remove the skillet from heat and let it cool for a few minutes.
  7. In a large mixing bowl, combine the cooked sausage mixture with cream cheese, Parmesan cheese, breadcrumbs, parsley, oregano, black pepper, and red pepper flakes (if using). Mix until well combined.
  8. Place the mushroom caps on a baking sheet lined with parchment paper.
  9. Fill each mushroom cap generously with the sausage filling.
  10. Sprinkle extra Parmesan cheese on top of each stuffed mushroom if desired.
  11. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  12. Let the stuffed mushrooms cool for a few minutes before transferring them to a serving platter.
  13. Garnish with fresh parsley and serve warm.
