- 20 large white mushrooms
- 1 pound Italian sausage
- 1 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (preferably Italian seasoned)
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms with a damp paper towel and remove the stems by gently twisting them off. Finely chop the stems and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped mushroom stems and sauté for 3-4 minutes until softened.
- Add minced garlic to the skillet and sauté for an additional minute until fragrant.
- Add the Italian sausage to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes.
- Remove the skillet from heat and let it cool for a few minutes.
- In a large mixing bowl, combine the cooked sausage mixture with cream cheese, Parmesan cheese, breadcrumbs, parsley, oregano, black pepper, and red pepper flakes (if using). Mix until well combined.
- Place the mushroom caps on a baking sheet lined with parchment paper.
- Fill each mushroom cap generously with the sausage filling.
- Sprinkle extra Parmesan cheese on top of each stuffed mushroom if desired.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
- Let the stuffed mushrooms cool for a few minutes before transferring them to a serving platter.
- Garnish with fresh parsley and serve warm.
