- 1 pound breakfast sausage
- 2 cups frozen hashbrowns, thawed
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika (optional)
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the breakfast sausage. Use a wooden spoon to break it up into small pieces as it cooks for about 5-7 minutes until fully browned.
- Drain any excess grease from the skillet.
- Add the diced onion and bell pepper to the skillet with the sausage. Sauté for about 3-4 minutes until the vegetables are softened.
- Remove the skillet from heat and let the mixture cool slightly.
- In a large mixing bowl, combine the thawed hashbrowns, shredded cheddar cheese, garlic powder, onion powder, black pepper, salt, and paprika (if using). Mix until well combined.
- Add the cooled sausage and vegetable mixture to the hashbrown mixture and stir until evenly distributed.
- In a separate small bowl, beat the two large eggs and add them to the mixture. Mix thoroughly until the eggs are fully incorporated.
- Prepare your muffin tin by spraying it with cooking spray or lightly coating it with oil.
- Fill each muffin cup with the hashbrown mixture using a spoon or small ice cream scoop, pressing down gently to pack it in without making it too dense.
- Fill each cup to the top, as they will shrink slightly while baking.
- Place the muffin tin in the preheated oven and bake for 25-30 minutes until the tops are golden brown and crispy.
- Rotate the muffin tin halfway through baking for even cooking.
- Once done, remove the muffin tin from the oven and let it cool for about 5 minutes.
- Use a butter knife to gently run around the edges of each muffin cup to loosen the bites, then carefully pop them out.
