  • 2 cups frozen hashbrowns, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika (optional)
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Use a wooden spoon to break it up into small pieces as it cooks for about 5-7 minutes until fully browned.
  3. Drain any excess grease from the skillet.
  4. Add the diced onion and bell pepper to the skillet with the sausage. Sauté for about 3-4 minutes until the vegetables are softened.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. In a large mixing bowl, combine the thawed hashbrowns, shredded cheddar cheese, garlic powder, onion powder, black pepper, salt, and paprika (if using). Mix until well combined.
  7. Add the cooled sausage and vegetable mixture to the hashbrown mixture and stir until evenly distributed.
  8. In a separate small bowl, beat the two large eggs and add them to the mixture. Mix thoroughly until the eggs are fully incorporated.
  9. Prepare your muffin tin by spraying it with cooking spray or lightly coating it with oil.
  10. Fill each muffin cup with the hashbrown mixture using a spoon or small ice cream scoop, pressing down gently to pack it in without making it too dense.
  11. Fill each cup to the top, as they will shrink slightly while baking.
  12. Place the muffin tin in the preheated oven and bake for 25-30 minutes until the tops are golden brown and crispy.
  13. Rotate the muffin tin halfway through baking for even cooking.
  14. Once done, remove the muffin tin from the oven and let it cool for about 5 minutes.
  15. Use a butter knife to gently run around the edges of each muffin cup to loosen the bites, then carefully pop them out.
