  • 4 slices of sourdough bread
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 23 fresh jalapeños, roasted and chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with parchment paper. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
  2. Remove from the oven and let cool for 10 minutes. Peel off the charred skin using your fingers or a paper towel.
  3. Slice the jalapeños in half lengthwise, remove seeds (for milder flavor), and chop into small pieces. Set aside.
  4. In a medium bowl, beat the softened cream cheese until smooth and creamy.
  5. Mix in the shredded sharp cheddar and mozzarella cheeses.
  6. Fold in the chopped roasted jalapeños until evenly distributed.
  7. Add garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined.
  8. Lay out sourdough slices and spread a thin layer of mayonnaise on one side of each slice.
  9. On the unbuttered side of two slices, spread the jalapeño cheese mixture evenly.
  10. Place the other two slices on top, mayonnaise side up, forming two sandwiches.
  11. In a skillet or griddle, heat over medium heat and melt 1 tablespoon of butter.
  12. Place the sandwiches in the skillet and cook for 4-5 minutes until golden brown and crispy.
  13. Carefully flip the sandwiches, adding another tablespoon of butter if needed. Cook for an additional 4-5 minutes until golden and cheese is melted.
  14. Cover the skillet with a lid for the last minute to ensure the cheese melts fully.
  15. Remove sandwiches from the skillet and let sit for a minute before slicing in half.
  16. Serve with ranch dressing or a spicy dipping sauce, and garnish with fresh cilantro or green onions if desired.
