- 1 (15 oz) can of pure pumpkin puree
- 1 (8 oz) package of cream cheese, softened
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground nutmeg
- 1/4 teaspoon of ground ginger
- 1 (12 oz) container of whipped topping, thawed
- 1 package of graham crackers (about 14–16 sheets)
- 1/2 cup of chopped pecans or walnuts (optional)
- Caramel sauce for drizzling (optional)
Instructions
- In a large mixing bowl, combine the softened cream cheese and powdered sugar. Using an electric mixer, beat them together on medium speed until the mixture is smooth and creamy (about 2-3 minutes).
- Add the pumpkin puree, vanilla extract, ground cinnamon, ground nutmeg, and ground ginger to the cream cheese mixture. Continue mixing on medium speed until well combined and smooth, scraping down the sides of the bowl as needed.
- Gently fold in the thawed whipped topping using a spatula, being careful not to deflate it.
- Grab a 9×13 inch baking dish. Lay down a single layer of graham crackers at the bottom, breaking them as needed to fit.
- Spread a generous layer of the pumpkin mixture over the graham crackers, smoothing it out evenly.
- Repeat the layering process with more graham crackers and pumpkin mixture for 2-3 layers, finishing with a layer of pumpkin mixture on top.
- If using, sprinkle chopped pecans or walnuts on top of the final layer.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the graham crackers to soften.
- Prepare any additional toppings, such as whipped cream or caramel sauce, while the cake chills.
- After chilling, remove the cake from the refrigerator and take off the cover.
- Cut the cake into squares or rectangles using a sharp knife (dipping it in warm water helps for clean cuts).
- Serve each piece on a plate, adding a dollop of whipped cream and a drizzle of caramel sauce if desired.
