- 1 cup pomegranate juice (freshly squeezed or store-bought)
- 1 bottle of chilled sparkling wine (such as Prosecco or Champagne)
- Fresh pomegranate seeds for garnish
- Fresh mint leaves for garnish (optional)
- Ice cubes (optional)
- 1 tablespoon of sugar (optional, for sweetening the juice)
- 1 tablespoon of lemon juice (optional, for added tartness)
Instructions
- If using fresh pomegranates, cut them in half and extract the juice using a juicer or citrus press. Alternatively, blend the seeds with a little water and strain through a fine mesh sieve.
- For sweetness, stir in 1 tablespoon of sugar until dissolved. For tartness, add 1 tablespoon of lemon juice. Adjust to taste and chill in the refrigerator.
- Chill the bottle of sparkling wine in the refrigerator for at least 2 hours or in an ice bucket for 30 minutes.
- In champagne flutes or cocktail glasses, pour about 1/3 of the glass with pomegranate juice. Adjust the ratio based on your preference.
- Slowly top off with chilled sparkling wine, pouring gently to maintain the bubbles.
- Garnish each glass with fresh pomegranate seeds and, if desired, a sprig of fresh mint.
