  • 1 cup pomegranate juice (freshly squeezed or store-bought)
  • 1 bottle of chilled sparkling wine (such as Prosecco or Champagne)
  • Fresh pomegranate seeds for garnish
  • Fresh mint leaves for garnish (optional)
  • Ice cubes (optional)
  • 1 tablespoon of sugar (optional, for sweetening the juice)
  • 1 tablespoon of lemon juice (optional, for added tartness)

Instructions

  1. If using fresh pomegranates, cut them in half and extract the juice using a juicer or citrus press. Alternatively, blend the seeds with a little water and strain through a fine mesh sieve.
  2. For sweetness, stir in 1 tablespoon of sugar until dissolved. For tartness, add 1 tablespoon of lemon juice. Adjust to taste and chill in the refrigerator.
  3. Chill the bottle of sparkling wine in the refrigerator for at least 2 hours or in an ice bucket for 30 minutes.
  4. In champagne flutes or cocktail glasses, pour about 1/3 of the glass with pomegranate juice. Adjust the ratio based on your preference.
  5. Slowly top off with chilled sparkling wine, pouring gently to maintain the bubbles.
  6. Garnish each glass with fresh pomegranate seeds and, if desired, a sprig of fresh mint.
  7. Serve immediately to enjoy the bubbly freshness. Consider pairing with light appetizers or breakfast dishes.
