This Pink Raspberry Lemonade is a refreshing blend of tart lemon and sweet raspberry flavors, perfect for summer gatherings. Garnished with fresh mint and raspberries, it’s a delightful drink that’s both beautiful and delicious!


Ingredients

  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup sparkling water (optional, for fizz)
  • Ice cubes
  • Fresh mint leaves (for garnish)

Instructions

  1. Rinse the fresh raspberries under cold water and gently pat them dry.
  2. In a blender, add the rinsed raspberries and blend on high speed until completely pureed (about 30 seconds to a minute).
  3. Pour the raspberry puree through a fine mesh strainer into a bowl or measuring cup, pressing with a spatula to extract as much liquid as possible. You should have about ¾ cup of raspberry liquid. Set aside.
  4. In a medium saucepan, combine 1 cup of granulated sugar with 1 cup of water.
  5. Heat over medium heat, stirring occasionally until the sugar has completely dissolved (about 3-5 minutes).
  6. Remove from heat and let cool for a few minutes.
  7. Squeeze the lemons to extract the juice, straining it through a fine mesh strainer into a measuring cup to remove seeds and pulp. You should have about 1 cup of lemon juice.
  8. Combine the cooled simple syrup with the lemon juice in a large pitcher.
  9. Add the raspberry puree to the pitcher and stir gently to combine.
  10. Pour in the remaining 3 cups of cold water and stir well. Taste and adjust sweetness if desired.
  11. If using, gently stir in 1 cup of sparkling water for fizz.
  12. Fill tall glasses with ice cubes.
  13. Pour the pink raspberry lemonade over the ice, filling the glasses to the top.
  14. Garnish with fresh raspberries and a sprig of mint. Optionally, add a lemon slice to the rim of each glass.
  15. Store any leftover lemonade in a sealed container in the refrigerator for up to 3 days. Stir gently before serving if it separates.

Notes

  • For a smoother drink, strain the raspberry puree to remove seeds.
  • Adjust the sweetness by adding more sugar or simple syrup to taste.
  • The sparkling water is optional but adds a nice effervescence.
