Description
This Pink Raspberry Lemonade is a refreshing blend of tart lemon and sweet raspberry flavors, perfect for summer gatherings. Garnished with fresh mint and raspberries, its a delightful drink thats both beautiful and delicious!

- 1 cup fresh raspberries (plus extra for garnish)
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups cold water
- 1 cup sparkling water (optional, for fizz)
- Ice cubes
- Fresh mint leaves (for garnish)
Instructions
- Rinse the fresh raspberries under cold water and gently pat them dry.
- In a blender, add the rinsed raspberries and blend on high speed until completely pureed (about 30 seconds to a minute).
- Pour the raspberry puree through a fine mesh strainer into a bowl or measuring cup, pressing with a spatula to extract as much liquid as possible. You should have about ¾ cup of raspberry liquid. Set aside.
- In a medium saucepan, combine 1 cup of granulated sugar with 1 cup of water.
- Heat over medium heat, stirring occasionally until the sugar has completely dissolved (about 3-5 minutes).
- Remove from heat and let cool for a few minutes.
- Squeeze the lemons to extract the juice, straining it through a fine mesh strainer into a measuring cup to remove seeds and pulp. You should have about 1 cup of lemon juice.
- Combine the cooled simple syrup with the lemon juice in a large pitcher.
- Add the raspberry puree to the pitcher and stir gently to combine.
- Pour in the remaining 3 cups of cold water and stir well. Taste and adjust sweetness if desired.
- If using, gently stir in 1 cup of sparkling water for fizz.
- Fill tall glasses with ice cubes.
- Pour the pink raspberry lemonade over the ice, filling the glasses to the top.
- Garnish with fresh raspberries and a sprig of mint. Optionally, add a lemon slice to the rim of each glass.
- Store any leftover lemonade in a sealed container in the refrigerator for up to 3 days. Stir gently before serving if it separates.
Notes
- For a smoother drink, strain the raspberry puree to remove seeds.
- Adjust the sweetness by adding more sugar or simple syrup to taste.
- The sparkling water is optional but adds a nice effervescence.
