Pineapple Coconut Spritzer: A Refreshing Tropical Drink Recipe

Description

A refreshing and creamy Pineapple Coconut Spritzer, perfect for a taste of the tropics! Made with fresh pineapple puree, creamy coconut milk, and sparkling water, this drink is easy to customize and incredibly delicious.

  • 1 ripe pineapple, peeled, cored, and chopped
  • 1 can (13.5 oz) full-fat coconut milk, refrigerated overnight
  • 1/4 cup granulated sugar (adjust to taste)
  • 1/4 cup fresh lime juice
  • 1/2 cup water (more if needed for desired consistency)
  • 1 bottle (750ml) chilled sparkling water or club soda
  • Ice cubes
  • Optional garnishes: pineapple wedges, lime slices, toasted coconut flakes, fresh mint sprigs

Instructions

  1. Chop the pineapple into roughly 1-inch chunks.
  2. Place the chopped pineapple into a high-speed blender or food processor.
  3. Blend the pineapple until it’s completely smooth, scraping down the sides as needed.
  4. Taste the pineapple puree. If it’s not sweet enough, add granulated sugar, a tablespoon at a time, until you reach your desired sweetness. Blend again to combine.
  5. Add the fresh lime juice to the pineapple puree. Blend again to combine.
  6. Add the water. Blend until everything is well combined. If you prefer a thinner consistency, add a little more water, a tablespoon at a time, until you reach your desired consistency.
  7. Strain the pineapple puree through a fine-mesh sieve into a bowl. This step is optional, but it will remove any remaining fibers and give you a super smooth and luxurious spritzer. Use a spoon or spatula to press the puree through the sieve, discarding any solids that remain.
  8. Cover the bowl with plastic wrap and refrigerate the pineapple puree for at least 30 minutes, or up to a few hours.
  9. Carefully remove the can of coconut milk from the refrigerator.
  10. Open the can of coconut milk. You should see a thick layer of solid coconut cream at the top and a watery liquid at the bottom.
  11. Using a spoon, carefully scoop out the thick coconut cream from the top of the can, leaving the watery liquid behind. Try to get as much of the cream as possible. Place the coconut cream in a separate bowl.
  12. If the coconut cream is very firm, you can gently whisk it with a fork or spoon until it’s smooth and creamy. Be careful not to over-whisk it, as it can become grainy.
  13. You can reserve the coconut water for another use, such as smoothies or cocktails.
  14. Fill glasses with ice cubes.
  15. In each glass, add about 1/4 cup of the chilled pineapple puree. Adjust the amount to your liking, depending on how strong you want the pineapple flavor to be.
  16. Next, add about 2-3 tablespoons of the coconut cream to each glass. Again, adjust the amount to your preference. The coconut cream will add a lovely richness and creaminess to the spritzer.
  17. Slowly top each glass with chilled sparkling water or club soda. Pour gently to avoid too much fizzing. Leave some room at the top of the glass for garnishes.
  18. Gently stir the spritzer to combine the pineapple puree, coconut cream, and sparkling water. Be careful not to over-stir, as you don’t want to lose all the fizz.
  19. Taste the spritzer and adjust the sweetness or tanginess as needed. If it’s not sweet enough, add a little more sugar or simple syrup. If it’s not tangy enough, add a squeeze of lime juice.
  20. Garnish the spritzers with pineapple wedges, lime slices, toasted coconut flakes, and/or fresh mint sprigs. Get creative and have fun with it!
  21. Serve immediately and enjoy your refreshing Pineapple Coconut Spritzer!

Notes

  • Make it boozy: For an adult version, add a shot of white rum or vodka to each glass before topping with sparkling water.
  • Spice it up: Add a pinch of cayenne pepper or a few slices of fresh ginger to the pineapple puree for a spicy kick.
  • Use frozen pineapple: If you don’t have fresh pineapple, you can use frozen pineapple chunks. Just thaw them slightly before blending.
