  • 1 cup fresh pineapple juice
  • 1/2 cup coconut cream
  • 1/2 cup white rum (optional)
  • 1 cup sparkling water or club soda
  • 1 tablespoon fresh lime juice
  • Ice cubes
  • Pineapple slices, for garnish
  • Fresh mint leaves, for garnish
  • Optional: shredded coconut, for rimming the glass

Instructions

  1. In a medium mixing bowl, combine the fresh pineapple juice and coconut cream. Whisk until smooth and well combined.
  2. If using, add the white rum to the mixture.
  3. Add the fresh lime juice to the mixture and stir.
  4. Cover the bowl with plastic wrap or transfer to an airtight container.
  5. Refrigerate for at least 30 minutes.
  6. If desired, pour shredded coconut onto a small plate.
  7. Run a lime wedge around the rim of each glass, then dip the rim into the shredded coconut.
  8. Remove the chilled mixture from the refrigerator and stir.
  9. Fill each prepared glass with ice cubes halfway.
  10. Pour the pineapple and coconut mixture over the ice, filling each glass about two-thirds full.
  11. Top off each glass with sparkling water or club soda and gently stir.
  12. Place a fresh pineapple slice on the rim of each glass.
  13. Add a few fresh mint leaves to each glass.
  14. Optionally, add a small paper umbrella or colorful straw.
  15. Serve immediately while cold and fizzy.
  16. Encourage guests to stir gently before sipping.

Notes

  • For a non-alcoholic version, simply omit the white rum.
  • Feel free to adjust the sweetness by adding more or less coconut cream based on your preference.
