A refreshing Pina Colada Spritz that blends fresh pineapple juice, creamy coconut, and sparkling water for a fizzy tropical treat. Ideal for summer gatherings or a relaxing afternoon, this drink is garnished with pineapple slices and mint leaves for an extra touch of paradise.

- 1 cup fresh pineapple juice
- 1/2 cup coconut cream
- 1/2 cup white rum (optional)
- 1 cup sparkling water or club soda
- 1 tablespoon fresh lime juice
- Ice cubes
- Pineapple slices, for garnish
- Fresh mint leaves, for garnish
- Optional: shredded coconut, for rimming the glass
Instructions
- In a medium mixing bowl, combine the fresh pineapple juice and coconut cream. Whisk until smooth and well combined.
- If using, add the white rum to the mixture.
- Add the fresh lime juice to the mixture and stir.
- Cover the bowl with plastic wrap or transfer to an airtight container.
- Refrigerate for at least 30 minutes.
- If desired, pour shredded coconut onto a small plate.
- Run a lime wedge around the rim of each glass, then dip the rim into the shredded coconut.
- Remove the chilled mixture from the refrigerator and stir.
- Fill each prepared glass with ice cubes halfway.
- Pour the pineapple and coconut mixture over the ice, filling each glass about two-thirds full.
- Top off each glass with sparkling water or club soda and gently stir.
- Place a fresh pineapple slice on the rim of each glass.
- Add a few fresh mint leaves to each glass.
- Optionally, add a small paper umbrella or colorful straw.
- Serve immediately while cold and fizzy.
- Encourage guests to stir gently before sipping.
Notes
- For a non-alcoholic version, simply omit the white rum.
- Feel free to adjust the sweetness by adding more or less coconut cream based on your preference.
- This drink is best enjoyed fresh but can be prepared in advance and stored in the refrigerator for a few hours before serving.
