- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced

- 4 hoagie rolls or sub rolls

Instructions
- Place the ribeye steak in the freezer for about 30 minutes to firm it up for easier slicing.
- Remove from the freezer and slice against the grain into thin strips, about 1/8 inch thick.
- Season the sliced steak with salt and pepper, adding garlic or onion powder if desired.
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and sauté for about 5 minutes until translucent.
- Add sliced green bell pepper and sauté for another 5-7 minutes until tender. Season with salt and pepper.
- Remove vegetables from the skillet and set aside.
- Increase heat to medium-high in the same skillet, adding more olive oil if necessary.
- Add seasoned ribeye steak in a single layer, cooking for 2-3 minutes without stirring to sear.
- Flip the steak and cook for another 2-3 minutes until browned and cooked through.
- Return sautéed onions and bell peppers to the skillet, stirring to combine and heat through for 1-2 minutes.
- Preheat the oven to 350°F (175°C) if toasting the hoagie rolls.
- Slice hoagie rolls lengthwise to create a pocket.
- Toast rolls in the oven for 5-7 minutes until golden and crispy, if desired.
- Fill each roll with the steak and vegetable mixture, topping with provolone cheese or Cheez Whiz.
- Return sandwiches to the oven for 2-3 minutes until cheese is melted.
- Remove sandwiches from the oven and let cool for a minute.
- Add optional toppings like hot peppers, mayonnaise, or mustard.
- Cut sandwiches in half and serve immediately with fries or a salad.
