- 1 cup pearl sago (tapioca pearls)
- 4 cups water (for boiling sago)
- 1 can (400 ml) coconut milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (optional)
- Fresh fruits for topping (mango, banana, or any of your choice)
- Ice cubes (optional, for serving)
Instructions
- Rinse the pearl sago under cold running water to remove excess starch and prevent clumping.
- In a medium-sized pot, bring 4 cups of water to a rolling boil.
- Add the rinsed pearl sago to the boiling water, stirring gently to prevent sticking.
- Reduce heat to medium and cook for 10-15 minutes, stirring occasionally, until the pearls turn translucent.
- Check the texture; if there are opaque centers, continue cooking for a few more minutes.
- Once cooked, drain the sago in a fine-mesh sieve and rinse under cold water to stop the cooking process.
- In a separate saucepan, pour in the can of coconut milk and turn the heat to medium-low.
- Add sugar and salt, stirring until the sugar is completely dissolved (about 2-3 minutes).
- If using, add vanilla extract and stir to combine.
- Let the mixture simmer gently for about 5 minutes, being careful not to let it boil.
- Remove from heat and set aside.
- In a large mixing bowl, combine the cooked sago and the coconut milk mixture, stirring gently to coat the sago evenly.
- Let the mixture sit for 10-15 minutes to allow the sago to absorb the coconut milk flavor.
- After resting, stir again. If too thick, add more coconut milk or water to reach desired consistency.
- Spoon the sago and coconut milk mixture into serving bowls or glasses.
- Top with fresh fruits of your choice, such as ripe mango slices or banana.
- For a chilled dessert, add ice cubes to each bowl before serving.
- Optionally, drizzle more coconut milk on top or sprinkle with toasted coconut flakes for added texture.
