  • Fresh fruits for topping (mango, banana, or any of your choice)
  • Ice cubes (optional, for serving)

Instructions

  1. Rinse the pearl sago under cold running water to remove excess starch and prevent clumping.
  2. In a medium-sized pot, bring 4 cups of water to a rolling boil.
  3. Add the rinsed pearl sago to the boiling water, stirring gently to prevent sticking.
  4. Reduce heat to medium and cook for 10-15 minutes, stirring occasionally, until the pearls turn translucent.
  5. Check the texture; if there are opaque centers, continue cooking for a few more minutes.
  6. Once cooked, drain the sago in a fine-mesh sieve and rinse under cold water to stop the cooking process.
  7. In a separate saucepan, pour in the can of coconut milk and turn the heat to medium-low.
  8. Add sugar and salt, stirring until the sugar is completely dissolved (about 2-3 minutes).
  9. If using, add vanilla extract and stir to combine.
  10. Let the mixture simmer gently for about 5 minutes, being careful not to let it boil.
  11. Remove from heat and set aside.
  12. In a large mixing bowl, combine the cooked sago and the coconut milk mixture, stirring gently to coat the sago evenly.
  13. Let the mixture sit for 10-15 minutes to allow the sago to absorb the coconut milk flavor.
  14. After resting, stir again. If too thick, add more coconut milk or water to reach desired consistency.
  15. Spoon the sago and coconut milk mixture into serving bowls or glasses.
  16. Top with fresh fruits of your choice, such as ripe mango slices or banana.
  17. For a chilled dessert, add ice cubes to each bowl before serving.
  18. Optionally, drizzle more coconut milk on top or sprinkle with toasted coconut flakes for added texture.
