  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (dairy-free if desired)
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, coconut flour, baking soda, and salt. Whisk to ensure no lumps.
  3. In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), and vanilla extract until smooth and glossy.
  4. Add the egg to the wet mixture and whisk until well blended.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined. Avoid overmixing.
  6. Fold in the dark chocolate chips.
  7. Cover the bowl with plastic wrap or a kitchen towel and chill the dough in the refrigerator for 15-30 minutes.
  8. Line a baking sheet with parchment paper.
  9. Scoop out portions of dough and roll them into balls (about 1-1.5 inches in diameter).
  10. Place the cookie dough balls on the prepared baking sheet, leaving about 2 inches of space between each.
  11. Optionally, press down on each cookie ball to flatten slightly.
  12. Bake in the preheated oven for 10-12 minutes, watching closely.
  13. Remove when edges are golden brown and centers are set but slightly soft.
  14. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  15. Store cooled cookies in an airtight container at room temperature for 3-5 days.
  16. For longer storage, freeze cookies in a freezer-safe bag or container, separated by parchment paper, for up to 3 months.
  17. To enjoy frozen cookies, thaw at room temperature or microwave for a few seconds.
