Instructions

  1. Peel the onions using a sharp knife to remove the outer skin, ensuring no papery bits remain.
  2. Slice the onions into 1/4-inch thick rings. A mandoline can be used for even slices, but a good knife works well too.
  3. Gently separate the rings and place them in a bowl, setting them aside while preparing the batter.
  4. In a large mixing bowl, combine the flour, baking powder, garlic powder, paprika, salt, and black pepper. Whisk until well mixed.
  5. In another bowl, whisk the egg and add the buttermilk. If using regular milk, add a splash of vinegar and let it sit for about 5 minutes to sour.
  6. Pour the wet mixture into the dry ingredients and stir until just combined. A few lumps are okay; do not overmix.
  7. Dip each onion ring into the batter, ensuring it is fully coated.
  8. Let the excess batter drip off, then transfer the ring to the bowl of breadcrumbs.
  9. Gently press the ring into the breadcrumbs to coat well, shaking off any excess before placing it on a plate.
  10. Repeat for all onion rings, laying them out on a baking sheet lined with parchment paper.
  11. In a large, deep skillet or heavy-bottomed pot, pour enough vegetable oil to submerge the onion rings (about 2-3 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C). Test the oil by dropping in a small piece of batter; if it sizzles and rises, it’s ready.
  12. Carefully add a few onion rings to the hot oil, frying in batches of 4-5 to avoid overcrowding.
