  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional, walnuts or pecans recommended)
  • Pinch of salt

Instructions

  1. In a heavy-bottomed saucepan, combine the granulated sugar, unsweetened cocoa powder, and a pinch of salt. Stir until well mixed.
  2. Pour in the whole milk and add the unsalted butter. Place the saucepan over medium heat.
  3. Stir continuously until the sugar and cocoa are completely dissolved to avoid graininess.
  4. Increase the heat to medium-high and bring the mixture to a boil. If using a candy thermometer, cook until it reaches the soft-ball stage (about 234°F or 112°C).
  5. Stir occasionally while boiling to prevent sticking and ensure an even texture.
  6. Remove the saucepan from heat and let it sit for about 5 minutes to cool slightly.
  7. After 5 minutes, add the vanilla extract and stir gently. If using nuts, fold them in now.
  8. Beat the fudge mixture vigorously with a wooden spoon for about 5 to 10 minutes until it thickens and loses its glossy appearance.
  9. Pour the fudge mixture into the lined baking dish, spreading it evenly into the corners with a spatula.
  10. Let the fudge sit at room temperature for about 2 hours to set. Alternatively, refrigerate to speed up the process, but room temperature is preferred for texture.
  11. Once set, lift the fudge out of the baking dish using the parchment paper and place it on a cutting board.
  12. Cut into squares or rectangles, aiming for about 1-inch pieces.
  13. Store any leftover fudge in an airtight container at room temperature for up to a week, or refrigerate for longer storage.
