Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed. Beat until the mixture is light and fluffy, about 2-3 minutes.
- Add the vanilla extract and eggs to the butter-sugar mixture. Continue to beat until well combined, scraping down the sides of the bowl as necessary, about 1 minute.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
- Fold in the rolled oats, semi-sweet chocolate chips, and chopped nuts (if using) with a spatula or wooden spoon until evenly distributed.
- (Optional) Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to enhance flavors and prevent spreading.
- Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie. Flatten the tops slightly for even baking.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look set but slightly soft.
- Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
