- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by lining it with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- Fold in the rolled oats using a spatula until evenly distributed.
- Finally, fold in the semi-sweet chocolate chips and optional chopped nuts.
- Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Remove from the oven and let cool in the pan for 10-15 minutes.
- Use the parchment paper to lift the bars out of the baking dish onto a cutting board.
- Cut into squares or rectangles, yielding about 24 bars.
- Allow to cool completely on a wire rack before serving.
- Store in an airtight container at room temperature for up to a week, or freeze for longer storage, separating layers with parchment paper.
