Enjoy these chewy Oatmeal Chocolate Chip Bars, a perfect blend of wholesome oats and rich chocolate chips. Ideal for snacks, desserts, or a quick breakfast, these bars are easy to make and deliciously satisfying!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by lining it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until smooth and creamy.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in the rolled oats using a spatula until evenly distributed.
  7. Finally, fold in the semi-sweet chocolate chips and optional chopped nuts.
  8. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
  9. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Remove from the oven and let cool in the pan for 10-15 minutes.
  11. Use the parchment paper to lift the bars out of the baking dish onto a cutting board.
  12. Cut into squares or rectangles, yielding about 24 bars.
  13. Allow to cool completely on a wire rack before serving.
  14. Store in an airtight container at room temperature for up to a week, or freeze for longer storage, separating layers with parchment paper.
