  • 1 cup almond butter (or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup chopped nuts (walnuts, almonds, or pecans)
  • 1/2 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, and chopped nuts. Mix well to ensure even distribution.
  2. In a separate bowl, whisk together the almond butter (or peanut butter), honey (or maple syrup), cocoa powder, vanilla extract, and salt until smooth and creamy.
  3. Pour the wet mixture over the dry ingredients in the large mixing bowl. Use a spatula or your hands to mix until all dry ingredients are coated.
  4. If using, fold in the mini chocolate chips.
  5. Line an 8×8 inch (or 9×9 inch) square baking dish with parchment paper, leaving some overhang for easy removal.
  6. Transfer the mixture into the prepared baking dish. Press down firmly and evenly to pack it tightly.
  7. Smooth out the top with the back of a measuring cup for an even surface.
  8. Cover the baking dish with plastic wrap or aluminum foil to retain moisture.
  9. Refrigerate for at least 2 hours, or overnight for best results.
  10. Remove the baking dish from the refrigerator and lift the block of nut squares out using the parchment paper.
  11. Place on a cutting board and cut into squares or rectangles as desired.
  12. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage, separating layers with parchment paper.
