  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder (or instant vanilla pudding mix)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes with an electric mixer).
  3. Add the beaten egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  4. In a separate bowl, combine the graham cracker crumbs, cocoa powder, shredded coconut, and chopped walnuts (if using). Stir until evenly mixed.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing for a crumbly texture.
  6. Spread the base mixture evenly into the prepared baking pan, pressing it down firmly with a spatula.
  7. Bake for 10-12 minutes, or until the edges are slightly firm. Remove from the oven and let it cool completely in the pan.
  8. While the base layer cools, beat the softened butter in a mixing bowl until creamy.
  9. Gradually add the powdered sugar and custard powder, mixing on low speed until combined.
  10. Add the milk and vanilla extract, beating on medium speed until smooth and creamy (about 2-3 minutes). Adjust consistency with more milk if needed.
  11. Once the base layer is cooled, spread the custard mixture evenly over the top.
  12. Refrigerate for about 30 minutes to allow the custard layer to set.
  13. In a small saucepan over low heat, combine the chopped semi-sweet chocolate and unsalted butter.
  14. Stir continuously until melted and smooth, being careful not to burn. Alternatively, use a microwave in 30-second intervals.
  15. Remove from heat and let cool slightly.
  16. After the custard layer has set, pour the melted chocolate over it and spread evenly with a spatula.
  17. Return the pan to the refrigerator for another 30-60 minutes, or until the chocolate topping is firm.
  18. Once the chocolate topping is firm, lift the dessert out of the pan using the parchment overhang.
