Ingredients
Scale
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1/2 cup unsweetened cocoa powder
- 1 cup shredded coconut
- 1/2 cup chopped walnuts (optional)
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons vanilla custard powder (or instant vanilla pudding mix)
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes with an electric mixer).
- Add the beaten egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- In a separate bowl, combine the graham cracker crumbs, cocoa powder, shredded coconut, and chopped walnuts (if using). Stir until evenly mixed.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing for a crumbly texture.
- Spread the base mixture evenly into the prepared baking pan, pressing it down firmly with a spatula.
- Bake for 10-12 minutes, or until the edges are slightly firm. Remove from the oven and let it cool completely in the pan.
- While the base layer cools, beat the softened butter in a mixing bowl until creamy.
- Gradually add the powdered sugar and custard powder, mixing on low speed until combined.
- Add the milk and vanilla extract, beating on medium speed until smooth and creamy (about 2-3 minutes). Adjust consistency with more milk if needed.
- Once the base layer is cooled, spread the custard mixture evenly over the top.
- Refrigerate for about 30 minutes to allow the custard layer to set.
- In a small saucepan over low heat, combine the chopped semi-sweet chocolate and unsalted butter.
- Stir continuously until melted and smooth, being careful not to burn. Alternatively, use a microwave in 30-second intervals.
- Remove from heat and let cool slightly.
- After the custard layer has set, pour the melted chocolate over it and spread evenly with a spatula.
- Return the pan to the refrigerator for another 30-60 minutes, or until the chocolate topping is firm.
- Once the chocolate topping is firm, lift the dessert out of the pan using the parchment overhang.
- Cut into squares and serve chilled. Enjoy your delicious layered dessert!
Notes
- For a nut-free version, simply omit the walnuts.
- You can substitute the custard powder with instant vanilla pudding mix for a similar flavor.
- Store leftovers in an airtight container in the refrigerator for up to a week.
