- 200g spaghetti or your favorite pasta
- 2 large eggs
- 100g grated Parmesan cheese
- 2 tablespoons white miso paste
- 100g pancetta or bacon, diced
- 2 cloves garlic, minced

- Freshly cracked black pepper, to taste
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water and bring it to a rolling boil. Add a generous amount of salt.
- Add the spaghetti to the boiling water and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
- Before draining, reserve about 1 cup of the pasta cooking water.
- Drain the pasta in a colander without rinsing.
- In a medium bowl, whisk together the eggs, grated Parmesan cheese, and white miso paste until smooth.
- Set the egg and cheese mixture aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced pancetta or bacon and cook for 5-7 minutes until crispy and golden brown.
- Stir in the minced garlic and sauté for about 1 minute until fragrant.
- Add the drained spaghetti to the skillet and toss to combine.
- Remove the skillet from heat to prevent the eggs from scrambling.
- Quickly pour the egg and cheese mixture over the hot pasta and toss vigorously. Add reserved pasta water as needed for desired consistency.
- Taste and season with freshly cracked black pepper and salt if necessary.
