Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine the chocolate cookie crumbs and melted butter. Stir until the mixture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
- Bake the crust for about 10 minutes. Remove from the oven and let it cool completely on a wire rack.
- Allow the mint chocolate chip ice cream to soften for about 10-15 minutes.
- Scoop the softened ice cream into a large mixing bowl and gently fold it to make it creamy and smooth, being careful not to overmix.
- Once the crust is cooled, fill it with the ice cream mixture, spreading it evenly with a spatula.
- Smooth the top and create decorative swirls if desired.
- Cover the pie with plastic wrap or aluminum foil and freeze for at least 4 hours, or until firm.
- In a large mixing bowl, pour in the heavy whipping cream.
- Beat the cream on medium speed until it thickens, then gradually add the powdered sugar and vanilla extract.
- Continue mixing until stiff peaks form.
- Spread the whipped cream evenly over the top of the pie.
