This Mint Chocolate Ice Cream Pie features a crunchy chocolate cookie crust filled with creamy mint chocolate chip ice cream, topped with luscious whipped cream, chocolate chips, and fresh mint leaves. It’s a delightful dessert perfect for impressing friends and family on any occasion!

Ingredients

Scale
  • 1 ½ cups chocolate cookie crumbs (about 20 cookies)
  • ½ cup unsalted butter, melted
  • 2 pints mint chocolate chip ice cream, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the chocolate cookie crumbs and melted butter. Stir until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Bake the crust for about 10 minutes. Remove from the oven and let it cool completely on a wire rack.
  5. Allow the mint chocolate chip ice cream to soften for about 10-15 minutes.
  6. Scoop the softened ice cream into a large mixing bowl and gently fold it to make it creamy and smooth, being careful not to overmix.
  7. Once the crust is cooled, fill it with the ice cream mixture, spreading it evenly with a spatula.
  8. Smooth the top and create decorative swirls if desired.
  9. Cover the pie with plastic wrap or aluminum foil and freeze for at least 4 hours, or until firm.
  10. In a large mixing bowl, pour in the heavy whipping cream.
  11. Beat the cream on medium speed until it thickens, then gradually add the powdered sugar and vanilla extract.
  12. Continue mixing until stiff peaks form.
  13. Spread the whipped cream evenly over the top of the pie.
  14. Sprinkle chocolate chips and add fresh mint leaves for garnish. Optionally, sprinkle leftover chocolate cookie crumbs on top.
  15. Let the pie sit at room temperature for about 10-15 minutes before slicing.
  16. Cut the pie into wedges using a sharp knife (dipping it in warm water helps).
  17. Serve each slice on a plate, optionally drizzling with chocolate sauce or adding extra whipped cream.
  18. Enjoy your delicious mint chocolate ice cream pie!
