- 4 large eggs

- 1 cup powdered sugar

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal later.
- In a medium saucepan, melt the 1 cup of unsalted butter over low heat. Once melted, remove it from the heat and stir in the 2 cups of granulated sugar until well combined.
- Allow the mixture to cool slightly, then add the 4 large eggs one at a time, mixing well after each addition. Stir in the 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together the 1 cup of all-purpose flour, 1 cup of unsweetened cocoa powder, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.
- Fold in the 1 cup of semi-sweet chocolate chips for an extra chocolatey flavor.
- Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
- Once baked, remove the brownies from the oven and let them cool in the pan on a wire rack for about 15-20 minutes.
- In a medium bowl, combine the 1 cup of powdered sugar, 1/4 cup of milk, 1 teaspoon of peppermint extract, and a few drops of green food coloring (if using). Mix until smooth and creamy.
- Once the brownies have cooled, spread the mint layer evenly over the top of the brownies using a spatula.
- Place the brownies in the refrigerator for about 30 minutes to set the mint layer.
- While the mint layer is setting, melt the 1 cup of dark chocolate chips and 1 tablespoon of coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and fully melted.
- Once melted, remove the brownies from the refrigerator and pour the chocolate mixture over the mint layer. Use a spatula to spread it evenly across the top.
- Return the brownies to the refrigerator for another 30 minutes to allow the chocolate topping to set completely.
- Once the chocolate topping has set, remove the brownies from the refrigerator. Use a sharp knife to cut them into squares or rectangles.
- For a decorative touch, sprinkle some crushed peppermint candies or chocolate shavings on top of the brownies before serving.
- Serve the mint brownies chilled or at room temperature.

- For a more intense mint flavor, you can adjust the amount of peppermint extract to your taste.
