  • 1 cup semi-sweet chocolate chips
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup dark chocolate chips (for topping)
  • 1 tablespoon coconut oil (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal later.
  2. In a medium saucepan, melt the 1 cup of unsalted butter over low heat. Once melted, remove it from the heat and stir in the 2 cups of granulated sugar until well combined.
  3. Allow the mixture to cool slightly, then add the 4 large eggs one at a time, mixing well after each addition. Stir in the 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together the 1 cup of all-purpose flour, 1 cup of unsweetened cocoa powder, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.
  6. Fold in the 1 cup of semi-sweet chocolate chips for an extra chocolatey flavor.
  7. Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

  15. Return the brownies to the refrigerator for another 30 minutes to allow the chocolate topping to set completely.
  16. Once the chocolate topping has set, remove the brownies from the refrigerator. Use a sharp knife to cut them into squares or rectangles.
  17. For a decorative touch, sprinkle some crushed peppermint candies or chocolate shavings on top of the brownies before serving.
  18. Serve the mint brownies chilled or at room temperature.
