- 1 cup (150g) almond meal
- 1 cup (120g) powdered sugar
- 1/2 cup (65g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large egg whites
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and diced
- Extra strawberries for garnish (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a mini muffin tin with butter or non-stick cooking spray, or line it with mini paper liners.
- In a large mixing bowl, whisk together the almond meal, powdered sugar, all-purpose flour, baking powder, and salt until well combined.
- In another bowl, whisk the egg whites until frothy but not stiff.
- Pour the frothy egg whites into the dry ingredients, then add the melted butter and vanilla extract. Gently fold until just combined, being careful not to overmix.
- Fold in the diced strawberries until evenly distributed.
- Fill each cavity of the prepared mini muffin tin about 3/4 full with the batter.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the friands cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
- Dust cooled friands with powdered sugar if desired.
- Garnish with sliced fresh strawberries for added color and flavor.
- Serve on a platter or individual plates. Enjoy with tea or coffee!
- Store in an airtight container at room temperature for up to 3 days, or freeze for up to a month.
Notes
- For homemade almond meal, grind blanched almonds in a food processor until fine, being careful not to over-process.
- Feel free to substitute strawberries with other fruits like blueberries or raspberries for a different flavor.
