  • 1 cup (150g) almond meal
  • 1 cup (120g) powdered sugar
  • 1/2 cup (65g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large egg whites
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • Extra strawberries for garnish (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a mini muffin tin with butter or non-stick cooking spray, or line it with mini paper liners.
  3. In a large mixing bowl, whisk together the almond meal, powdered sugar, all-purpose flour, baking powder, and salt until well combined.
  4. In another bowl, whisk the egg whites until frothy but not stiff.
  5. Pour the frothy egg whites into the dry ingredients, then add the melted butter and vanilla extract. Gently fold until just combined, being careful not to overmix.
  6. Fold in the diced strawberries until evenly distributed.
  7. Fill each cavity of the prepared mini muffin tin about 3/4 full with the batter.
  8. Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  9. Let the friands cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Dust cooled friands with powdered sugar if desired.
  11. Garnish with sliced fresh strawberries for added color and flavor.
  12. Serve on a platter or individual plates. Enjoy with tea or coffee!
  13. Store in an airtight container at room temperature for up to 3 days, or freeze for up to a month.

Notes

  • For homemade almond meal, grind blanched almonds in a food processor until fine, being careful not to over-process.
