Ingredients

Scale
  • 1 cup (100g) almond meal
  • 1 cup (120g) powdered sugar
  • 1/2 cup (65g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large egg whites
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • Extra strawberries for garnish (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your mini muffin tin by greasing it with butter or using non-stick cooking spray.
  3. In a large mixing bowl, combine the almond meal, powdered sugar, all-purpose flour, baking powder, and salt. Whisk these dry ingredients together until they are well combined.
  4. In another bowl, whisk the egg whites until they are frothy but not stiff.
  5. Pour the frothy egg whites into the bowl with the dry ingredients. Add the melted butter and vanilla extract. Gently fold the mixture together using a spatula or wooden spoon until just incorporated.
  6. Once the batter is mixed, gently fold in the diced strawberries.
  7. Using a spoon or a small ice cream scoop, fill each cavity of the prepared mini muffin tin about three-quarters full with the batter.
  8. Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Once baked, remove the tin from the oven and let it cool for about 5 minutes.
  10. Carefully transfer the friands to a wire rack to cool completely.
  11. Once the friands are completely cool, dust them with powdered sugar if desired.
  12. Garnish each friand with a slice of fresh strawberry on top if you like.
  13. Serve the mini strawberry friands on a platter or individual plates. Enjoy them fresh, or store any leftovers in an airtight container at room temperature for up to 2 days.

Notes

  • Ensure the melted butter is not too hot when added to the batter to maintain the texture.
  • Feel free to substitute strawberries with other fruits like blueberries or raspberries.
  • For a more intense almond flavor, add a teaspoon of almond extract.
  • For a nut-free version, replace almond meal with an equal amount of all-purpose flour.
