Instructions

  1. Stack the corn tortillas and cut them into strips about 1 inch wide. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper.
  3. Sauté for 5-7 minutes until soft and the onion is translucent. Stir occasionally.
  4. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the tortilla strips to the skillet and stir well to combine.
