Enjoy the delightful contrast of hot and cold with this Mexican Fried Ice Cream. Creamy vanilla ice cream is coated in a crispy cornflake crust and fried to golden perfection, then topped with chocolate syrup, whipped cream, and a cherry. A fun and delicious treat perfect for any occasion!

Ingredients

Scale
  • 4 cups vanilla ice cream
  • 1 cup cornflakes, crushed
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup vegetable oil (for frying)
  • Chocolate syrup (for drizzling)
  • Whipped cream (for topping)
  • Cherries (for garnish)
  • Optional: shredded coconut or chopped nuts for extra crunch

Instructions

  1. Scoop out the vanilla ice cream into 8 equal-sized balls using an ice cream scoop for a nice round shape.
  2. Place the ice cream balls on a baking sheet lined with parchment paper to prevent sticking.
  3. Freeze the ice cream balls for at least 2 hours until very firm.
  4. In a medium bowl, combine the crushed cornflakes and ground cinnamon, mixing well.
  5. In another bowl, add the all-purpose flour.
  6. In a third bowl, whisk together the eggs and vanilla extract until well combined.
  7. After 2 hours, remove the ice cream from the freezer.
  8. Roll each ice cream ball in the flour to coat fully.
  9. Dip the floured ice cream ball into the egg mixture, ensuring complete coverage.
  10. Roll the egg-coated ice cream ball in the cornflake mixture, pressing gently to adhere. Repeat for all balls.
  11. Place the coated balls back on the baking sheet and freeze for another hour.
  12. Heat the vegetable oil in a deep skillet or heavy-bottomed pot over medium-high heat until it reaches about 350°F (175°C).
  13. Carefully add one or two ice cream balls to the hot oil, avoiding overcrowding.
  14. Fry for 30 seconds to 1 minute until golden brown, turning gently with a slotted spoon.
  15. Remove the fried ice cream balls and place them on a plate lined with paper towels to drain excess oil.
  16. Place each fried ice cream ball on a serving plate.
  17. Drizzle chocolate syrup generously over the top and add optional toppings like shredded coconut or chopped nuts.
  18. Top each ball with a dollop of whipped cream.
  19. Garnish with a cherry on top.
  20. Serve immediately while warm and crispy for the best experience.
  21. Enjoy with additional toppings like fresh fruit, caramel sauce, or a sprinkle of cinnamon.
