- 6 large eggs
- 1 cup fresh spinach, chopped
- 1 cup cooked meat (such as ham, sausage, or bacon), diced
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Preheat your oven to 375°F (190°C).
- Chop the spinach into bite-sized pieces, finely chop the onion, and mince the garlic.
- Dice your cooked meat into small pieces.
- Grate the cheese if using a block.
- In a large mixing bowl, crack the eggs and add the milk. Whisk until well combined and slightly frothy.
- Add salt and pepper to taste (about 1/2 teaspoon salt and a pinch of pepper).
- Add the chopped spinach, diced meat, chopped onion, minced garlic, and shredded cheese to the egg mixture. Stir until evenly coated.
- In a large, oven-safe skillet, heat olive oil or butter over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and sauté for an additional 30 seconds.
- Toss in the chopped spinach and cook for 1-2 minutes until wilted.
- Carefully pour the egg mixture into the skillet over the sautéed vegetables, spreading it evenly.
- Cook on the stovetop for 5-7 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until puffed and the center is set.
- Optionally, switch to broil for the last 2-3 minutes for a golden top.
- Remove from the oven and let cool for 5 minutes.
- Slice into wedges and serve warm or at room temperature.
- Garnish with fresh herbs like parsley or chives if desired.
- Serve with a side salad or your favorite accompaniment.
