  • 1 cup fresh spinach, chopped
  • 1 cup cooked meat (such as ham, sausage, or bacon), diced
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the spinach into bite-sized pieces, finely chop the onion, and mince the garlic.
  3. Dice your cooked meat into small pieces.
  4. Grate the cheese if using a block.
  5. In a large mixing bowl, crack the eggs and add the milk. Whisk until well combined and slightly frothy.
  6. Add salt and pepper to taste (about 1/2 teaspoon salt and a pinch of pepper).
  7. Add the chopped spinach, diced meat, chopped onion, minced garlic, and shredded cheese to the egg mixture. Stir until evenly coated.
  8. In a large, oven-safe skillet, heat olive oil or butter over medium heat.
  9. Add the chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and sauté for an additional 30 seconds.
  10. Toss in the chopped spinach and cook for 1-2 minutes until wilted.
  11. Carefully pour the egg mixture into the skillet over the sautéed vegetables, spreading it evenly.
  12. Cook on the stovetop for 5-7 minutes until the edges start to set.
  13. Transfer the skillet to the preheated oven and bake for 15-20 minutes until puffed and the center is set.
  14. Optionally, switch to broil for the last 2-3 minutes for a golden top.
  15. Remove from the oven and let cool for 5 minutes.
  16. Slice into wedges and serve warm or at room temperature.
  17. Garnish with fresh herbs like parsley or chives if desired.
  18. Serve with a side salad or your favorite accompaniment.
