Instructions
- Peel the Yukon Gold potatoes and cut them into 1 to 2-inch chunks. Place them in a large pot and cover with cold water, ensuring the water is about an inch above the potatoes. Add a pinch of salt.
- Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for 15-20 minutes until fork-tender. Drain the potatoes and let them sit in the colander for a minute to evaporate excess moisture.
- Clean the leeks thoroughly by slicing and rinsing them under cold water. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the sliced leeks and sauté for 5-7 minutes until soft and translucent. Remove from heat.
- Return the drained potatoes to the pot over low heat. Mash the potatoes to your desired consistency using a potato masher or ricer. Gradually add the whole milk (or heavy cream), starting with half a cup, and stir gently to combine.
- Fold in the sautéed leeks, ensuring they are evenly distributed. Add the remaining tablespoon of butter and stir until melted. Season with salt and freshly ground black pepper to taste.
- Transfer the mashed potatoes to a serving bowl. Create a well in the center and add a pat of butter for presentation. Garnish with freshly chopped chives or parsley if desired. Serve warm alongside your favorite main dishes.
