Instructions

  1. Peel the Yukon Gold potatoes and cut them into 1 to 2-inch chunks. Place them in a large pot and cover with cold water, ensuring the water is about an inch above the potatoes. Add a pinch of salt.
  2. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for 15-20 minutes until fork-tender. Drain the potatoes and let them sit in the colander for a minute to evaporate excess moisture.
  3. Clean the leeks thoroughly by slicing and rinsing them under cold water. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the sliced leeks and sauté for 5-7 minutes until soft and translucent. Remove from heat.
  4. Return the drained potatoes to the pot over low heat. Mash the potatoes to your desired consistency using a potato masher or ricer. Gradually add the whole milk (or heavy cream), starting with half a cup, and stir gently to combine.
  5. Fold in the sautéed leeks, ensuring they are evenly distributed. Add the remaining tablespoon of butter and stir until melted. Season with salt and freshly ground black pepper to taste.
  6. Transfer the mashed potatoes to a serving bowl. Create a well in the center and add a pat of butter for presentation. Garnish with freshly chopped chives or parsley if desired. Serve warm alongside your favorite main dishes.
